I have always been curious about why this option exists. Now that I have been using sentry drones I think I know why. Assume a Domi w/ 3 sets of 5 Sentries. I drop one set. In PvE that's all you need because the rats don't flee and you scoop if they target.
But in PvP the target might be decide to move out of the Sentries' range. If you are pursuing to lay some blaster damage on, you can't scoop the drones so you abandon them for <hopefully> later pickup and drop a 2nd set of 5 sentries. Enlightenment! However, this brings up a couple of interesting questions.
Q1. If a mentally challenged target somehow comes back into range of the original sentry drop, will they remember the target and start shooting at it again?
Q2. If I abandon the drones while the target is still in range, will they continue shooting at the target (assume the target is not shooting at them)?
Q2A. If so, will they continue shooting when I drop the 2nd batch and engage them?
Q2B. If so, would CCP regard that as an exploit to get around the 5 drones per ship?
[I could run some experiments, but I was hoping someone has already been there and done that. I'd also rather not get banned testing Q2B. B-)]

When you abandon drones they just chill. They do nothing.

The main reason to abandon drones is so that you can launch another set without waiting for the existing drones to return to your drone bay. You've already given one good example - dropping sentries which then become useless because the target heads out of range. You might also want to do something similar if you suddenly got a frigate tackler on you (such as a covops) - forget the sentries, it's time to release Warrior IIs and kill him/force him off before his gangmates land! Another example that's happened to me before, is that I've been in a Curse attacking some kind of BC with my gangmates, when a Falcon decloaks 80km away. I burn towards the Falcon and manage to get within 40km without him cloaking or warping out, so I alpha his cap (always satisfying ) and put a point on him. By this point my Hammerheads are about 100km away, and I really want to pop the Falcon ASAP before he gets extra backup. So abandoning those Hammerheads and launching a second flight of mediums to kill the Falcon makes a lot more sense.
Since the drones just become dead in space (just like when their controlling ship warps out or dies), they are scoopable back to the drone bay. In the given example, after killing the Falcon I was able to MWD back towards my Hammerheads (sending the current drones on the BC target) and rescoop them back to the drone bay when I was in range.
