Are you referring to your survey scanner (module on the ship) or your overview (box that shows things in space).
If you're talking about the overview, you can change the settings and select/deselect different ore types. Just right click the little arrow at the top left and change settings. Then go into the types in the top left tab of the settings box and check the ones under the asteroids category that you want to see. "Boo hoo. Cry some more." CCP Whisper

Yeah, first open your Over View Settings, then go to Filters, then select Asteroids. If you are in the default setting - only Veldspar will be selected.
What you want to do, is to right click on the Overview Triangle and then Select Load Default Mining. This will have almost all the asteroids checked in Filters.
Save this as Default Mining.
Then go to you Over View settings again and select the Tabs section.
Create a tab for Default and Default Mining (or call it whatever you want - I use (Stan & SG) & (Mining).
Now - this doesn't mean you will see any asteroids if you warp to a belt. They could all be mined out. Look at the time. Down time is at 1100 GMT and start up at 1200 GMT. The farther you get away from those times the more opportunity other people have had to go in there and mine all the asteroids out. So you may need to go to a different system.
Be thankful though. If you need Nocxium ... they don't have any in Gallente space ... as Plagioclase doesn't have any in it. Of course it doesn't have any Zydrine either ... so some of that stuff you will either have to buy on the market or reprocess from loot.

alternatively, start another mission line. preferable the balancing the books one. wait till you get the hauler.
reprocess the free hauler and use those minerals to build the cap boosters. ----------------------------------------------- Don't think of it as dying, Think of it as leaving early to avoid the rush |

A couple of ways to go about doing this: 1: open your map, and find a .7-.9 security system in the neighborhood to mine pyroxeres or plaglioclase.
2: raise the cash to buy the required minerals from the market. If you are in your starter system, you might be better off shipping it from a few systems away.
3: reprocess cargo looted from previous missions or other mission lines.
