How long do they last? Will they eventually disappear?
Also, is there a way to get them back into my ships cargo bay? Thanks.

OK ... here's how to use GSC's ...
1) Buy them one at a time, assemble them and put them in your hauler until you can't carry any more. Then buy a second set and make two trips to take them all home.
2) Put one set in your haulers cargo hold and go out to a .7 system or below.
3) Right click on one of the GSC's in your hold and select Launch for Self, then password it and anchor it. You must password it every single time you launch it. So have two passwords. Whichever one you used last time will be the Old Password. The very first time leave Old Password blank. When the GSC anchors - it will take 60 seconds - it will do this little shimmy and the lights will change color. I don't remember which color is anchored but the two colors are red and green. Watch what color it is when you launch it. If the lights don't change color it isn't anchored.
4) Anchor a string of these through the belt 5000 meters from each other and everything else (including wrecks). If you have a spot you want to put a can and an asteroid is in the way - you can mine the asteroid out - then put a can there.
5) Go back and get your miner. Come out to the belt and move down the line of GSC's filling them all up.
6) Go back and get your hauler then put the second set of GSC's in it. Fly back out to your string of cans and empty each anchored can into one in your hold. You need the second set as - GSC's only take up 3,000m3 of space in your hold but they themselves will hold 3,900m3 worth of stuff. Something about being Planck containers. If you don't have a set of GSC's in your hold - you will not be able to empty the ones you deployed without making two trips. Also, when you haul things around, you can use the GSC's in your hauler to increase it's capacity significantly
7) Rinse and repeat until you are sick of it.
8) You can then leave the GSC's you anchored in place for as long as you like - as long as you visit them (open the container) at least once every 30 days. Otherwise they will go away. So there is no need to anchor the cans every day if you mine that system often. You can get other sets of GSC's and place them in other sytems/belts.
Now, the above all works very well until you get into a mining barge. If you're using a mining frigate or cruiser they're fine. But mining barges fill them up so fast it really cuts down on the amount you can mine having to empty your GSC's so often, not to mention the inefficiency of having to move the barge ... mining barges being the quick, nimble ships that they are ...
As Jet Cans hold 27,000m3 of stuff they are the only practical alternative for barges. So there, as mentioned, what you want is a quiet system to mine in where you won't be bothered OR mining in mission space. Lots of missions have Veldspar asteroids in them. Take the mission, finish it, then get your mining barge and mine it before turning it in.
Of course - the best way to mine - is to have a Miner/Hauler team working together. Now here, some people use GSC's as a transfer point but if you're taking the ore out of the can immediately you usually don't have a problem. Just leave a book mark in the Jet Can, name it with the time it was launched so you'll know when it will expire (in 2 hours).
Pull the bookmark and pop the can if someone comes around bothering you. Keep your overview clear of rocks if you aren't targeting one so you can see intruders. Use two tabs, one with rocks one without. Do a Look at anyone coming into your system then move your POV around to their stern to see where they are going. If they head for your can - pull the bookmark and pop it. Seeing you are alert - as long as you don't trash talk them - they'll go bother someone else. Once they leave - jettison the bookmark and go back to mining.
The hauler should have a set of GSC's in their hold - along with Cargo Hold Expander II's. You can also put on rigs that increase it's capacity but they are expensive.

I am pretty sure I anchored them, because it asked me for a password sometimes. But they never turned any colour. They were always white.

1) Are you using Giant Secure Containers - or some other type of container?
2) Are you in a .7 or lower security system?
3) Did you issue the Anchor Command? It is in addition to the password command.
I've not anchored a GSC in a long time so I forget which colors the lights were before and after anchoring but the two colors involved were definitely red and green.

I sense some confusion here.

Red = Anchored
Yellow = Anchoring in Progress
Green = Unanchored
Incidentally, the same colors apply to anchored mobile warp disruptors (bubbles) in 0.0.
