Am I correct that the best Amarr ship to shoot for for a scanning/hacking/archaeology/salvaging kind of ship is the Covert Ops Anathema? The goal I want to accomplish with this is to use the Expanded Probe Launcher, to be able to find both exploration sights as well as enemy players, and have to tools necessary to use hacking, archaeology, and salvaging equipment for all these encounters.
Weaponry is not important, this ship is being designed to run with a few friends of mine who are all combat oriented.
What skills, besides the pre-requisites, should I focus on to improve at this task.
Am I wrong about the ship? It seems to be the most logical and best fit type of ship for this kind of work.

Yes. The Anathema (and its t1 counterpart) are by far the best ships for scanning down players. If you have the cash, a couple gravity capacitor rigs (6 mil each) and maybe even a sisters probe launcher and/or sisters probes (40-45 mil for launcher, 7 mil for a set of 5 probes) help even more.
As long as your friends can handle all the rats, you'll do fine; just fit a salvager, analyzer, and codebreaker (though you can swap them out depending on the site you're running at the time).
As for skills:
Astrometric Triangulation = better scan strength
Astrometric Rangefinding = scans are faster
Astrometric pinpointing = less scan deviation

Yes and no really. The covert is defiantly the best ship for probing stuff out as it gets the probe strength bonuses. However they they do tend to get killed quite quickly if you are decloaked and your friends are on hand very quickly.
As an alternative, the pilgrim makes a nice exploration ship, the strength of the probes isn't quite so high but that's not such an issue these days.
Really you should get the probing skills as high as you can, lvl 5 for all of them if you can spare the time. If not then level 3s and 4s are good enough. Its more of an issue with you are probing for ships as the lower skills means having to resize/move/scan a bit more then you would if you have perfect skills. For exploration where your not in such a rush its fine.

Thanks a bunch guys. Didn't realize there were other specific scanning skills, I'll definitely get those. Thanks for confirming the Covert Ops it probably my best bet.

Bear in mind that you can only fit one salvager onto an anathema (plus the covert ops cloak and probe launcher of course.) That isn't really enough to keep up with salvaging the kills of several friendlies (or even one friendly).
Also where are you planning on hacking cans? I'd be pretty nervous about hacking cans in low sec, for example, because hacking cans can spawn rats and your ~100 million isk covert ops is really fragile. Hope your friends are paying attention...

Well generally when doing this I will be rolling around with a Battleship, (Thats what my brother primarily flies), and another player who is new and hasn't decided what he wants to fly yet, but something combat oriented. Do you think two combat type ships with me will be enough for most low sec hacking/archaeology encounters?

It isn't so much your friends being a specific ship as the person running it being able to respond to things threatening you fast enough.
Rats tend to go for the weakest ship - which is going to be YOU. So ... I'm not so sure I'd do much more than find things for these guys, then maybe leave and come back in a different ship that isn't as fragile or as expensive.
I don't really know all that much about this ... but I've been thinking along these lines myself - and that is what I was thinking of doing.
