How much are traders paying per contract (or per jump) to get their stuff moved relatively quickly, let's say in an hour or two. What are standard rules for setting up courier contracts? Sorry if the questions are too nooby, but you have to start somewhere.

A good howl (for example, AAAAAAOOOOOOOHHHHHH!!!!) goes for around one mil per second of duration...
For hauling, the going rate is somewhere around 1-2% of collateral. Be sure to set collateral high enough so that if the other party decides to keep your stuff you won't lose money. I set mine for 2X what it would cost me to buy the item(s) on the open market and have (unfortunately) only had one or two failed. Most of my courier contracts get completed within a day or two.

In high-sec with Industrial sized quantities, 120K a jump, irrespective of collateral. Never had a contract not fulfilled within 6 hours.

I go with a mashup of the two.
If used cargo space is low I go for the per jump pricing.
If cargo space is high I tend to go for 1-2% of collateral
If I can't make up my mind I calculate out both and go with the higher one that still gives me decent margins.

Can't really speak to an hour or two. Based on the fact that I set up all my contracts giving the courier 3 days to make at most 10 jumps, I'm a lazy trader that doesn't mind at all giving haulers room to make efficient runs - hell I'll even do their work for them and schedule multiple contracts with the same source or destination.
If I need something within the hour, I cart it myself.

Between major trade hubs, I pay 10,000 isk per jump with 150% cargo value collateral for a cargo size ranging from 100-2,500m3. Above 2,500m3 I pay an additional 10,000isk per jump. My contracts never go more than about 12 hours or so before being completed.
