I usually have 500 Spike L and 1000-2000 AM L with me, and 500 faction AM L. I usually use up less than half of that amount but usually stock up to those numbers because it has happened that I forgot to reload and then ran out of ammo :).
Any other ammo type doesn't really matter, the AM has an optimal of around 50km (too lazy to look it up what I have atm) and is hitting out far beyond that. I load the Spike if the foes are 80 or more km away, anything that gets closer gets pelted with AM. Changing ammo a lot hurts more than it helps since each change takes 10 seconds. In that time the target has already advanced into the next range band.
Faction ammo is used if I am in a hurry, meet some NPC with a big tank or simply because I feel like using it.

So much attitude over a mission ship. And pretty noobish advice too.
The simple fact is there are multiple ways to go. Not every ship has to be cap stable, but if you prefer that, then by all means. Other people don't mind having cap instability and want max damage.
I think even you can realize that your Nightmare is pretty far from max damage, having only 3 HS and no range/tracking mods. If you want cap stability, then that's fine, since your setup achieves that. But if you want max gank, your setup fails, because it doesn't deliver max gank.
The solution is to drop all those cap mods and fill them with damage, and since you likely still need to have some cap regen, one option is to fit a cap booster. It's not ideal for a permarun setup, obviously, but so what? There are different ways to setup a mission ship, and if you aren't leaving it afk, then who cares if you have to activate a cap booster from time to time.
Using a cap booster in missions isn't always fail. Thinking everything in EVE is like a binary good/bad switch... now that's pretty fail.

No troll, Seriously asking why you assume it's impossible for me to have flown a cap stable Nightmare and thus have no clue what it is capable of.
As I fly a Nightmare with more DPS and tracking computers/enhancers on a regular basis all I have to do is imagine it 20% to 30% crappier performance to know how yours does.

Mids t2 100mn ab t2 large cap injector t2 target painter shadow serpentis tracking mod with speed script
low's amarr navy rep 1300hp per cycle racial hardners and what not.
rig slots tracking rig falloff rig
like i was saying 30k range with guns with null, target painter to aggro everything out of range, you dont run out of cap because of the power hungry galante guns and your large rep funs for like 10 minutes without hitting a cap charge, and everything is in range of your tractor beam so you can plonk your @$$ in the middle and all you have to do is target! and if your running a mish with a friend and they want to tank you can toss in 3 mag stabs for really really stunning damage,(I have hit with groups at 12000 ish dp)
