I notice that the pirates I kill all seem to have a bounty. How do I collect on that? Is there someplace I have to go or does the money go right into my account?

If it is a player, then you have to kill the pod.
NPC bounties are added every 20 mins or so.
So only the killing is required.
It will show in wallet

NPC bounties are deposited to your account in blocks, every 20 minutes. They used to show up instantaneously, but CCP changed that a year or two ago citing this placed unnecessary load on the servers.
Note that if you join a player corp, the amount received will decrease commensurate with the tax rate of that corporation. Bounties and mission rewards below a certain low threshold (something like 100K-200K) are not taxed. In regards to bounties, this is based on the total you receive in the 20 minute time period, not individual ship bounties, to my knowledge. I think mission completion bonus time rewards are not taxed, but I'm not sure anymore.
