Coming back to Eve after 2 years away, and am hearing a decent amount about logistics ships and have a few questions:
1) Are they value added in fleet and / or gang operations? Enough to consider fitting one of my 2 chars for it?
2) Is there one type of logistics ship that is applicable to a wider variety of situations? In my mind, going Amarrian for cap regen seems very value-added, but I'm not very knowledgeable. Also, my main PvP / Mission runner is Amarrian, so it seems like either the capper or the Gallente armor repper would be a good companion.
Thoughts?

I fly Logistics.
They add a lot to any pvp fleet (eg not scirmish), our alliance even replaces logistics thats lost in fleet battle.
The Amarr is best, Galante (Oneiros) is also prity cool. They shine in any remote rep fleet if well setup and a desent orgenized fleet.
Do the calculations... 2 Oneiros repping with 3 Large Reppers each a BS thats being repped by 4-5 more BS with 1 Large repper. That can tank so much dps that you feel sorry for your opponent...

ooh, and here is a "basic" Oneiros fit for a RR Fleet. You wont come fast on a killmail, but your not there for that :) If you put offensive modules on your ship you can not jump out of system, so skip them :)

Logistics are win. They act as a force multiplier so you can take on much bigger gangs than you normally could. If you have logistics + ecm you're basically unstoppable. Best for rr bs gangs is guardian. Best for general roaming is scimitar.

Get two Guardians, fit 5 large remote reppers and an large energy transfer on each. Run the energy transfers between the Guardians and sweep 10 large reppers across the gang/fleet.
They will love you long time.

Well, since I'm coming back "blind" (not much recollection on tactics, etc) I'm planning to fly with Eve - Uni at 1st, so most likely part of fleet actions. With this in mind, what would be the "more valuable" ship to aim for?
Also, learning very quickly that it's not the "pre-reqs" that win the battle, it's the support skills. Is there a page / guide anywhere with suggestion on what make the best support skills for logistics ships?

What you mention is interesting because my secondary char is speccing ewar, so sounds like a good combo =D Though it sounds like it may not be realistic trying to play both chars at once in a pitched battle..

Two things about the link...
1) its over compleet, focus your skills on the ship you fly...
Becouse you only will put 1 or 2 types of modules on a Logistics in combat (most likely: Remote Armor and either energy transfer or tracking). Best ship is the guardian, second (and VERY close to best) Oneiros, so either train what you like most (With Galante the Ishtar is also close and one of the best HACs). Don't bother to fast with the armor repair drones, they actualy not that great in combat.
2) If you fly in an RRBS fleet, do not bother with with an armor repair unit, there should be enough RRBS to repair YOU! so you can increase your tank with the few low slots you have. Also always fit a MWD or an Afterburner.

Question: Is it a good idea to train for both logistics AND eWar? that way if my logistics ship is not needed for an op I can contribute via ewar?

They are both very useful and require similar skills so yes. Which type of ewar though? Each one is more suited to different things.
About skills, the only thing really required for logistics is core ships skills like cap and t2 fitting, plus logistics 5.
