I'd like to run EVE on a Mac to get the better graphics and sound. What minimum model of Mac do I need to be sure that EVE will run on it?
I would appreciate any pertinent suggestions.

Latest MacBook will run it fine if you stuck in some extra RAM, ATLEAST 2 GB, preferably 4. In Order of Performance MacBook Air MacBook MacBook Pro iMac Mac Pro -----------------

Don't know about you. I got early 2008 MacBook PRO with 4G of ram and 256MB Video memory. In big fleet fights something like ~300 ppl local, it's completely unplayable. When I come to think of it, on windows with ~500+ local it lags also alot, on same machine with bootcamp. I have all settings at LOW.

I don't really understand what you mean by better graphics and sound (as compared to what? A Windows PC?)
But the MacBook Pro line with the 9400 will run EVE fine on lower settings, and the 15" and 17" with the 9600s will run EVE quite a bit better than the 9400.
Also I would stay away from the air.

I didn't make myself clear, as usual. I want to buy a used Mac desktop system to run EVE on. What model should I look for?

It all depends on your budget and of course personal preferences. iMacs will runt if fine most of the time, assuming 4GB of RAM. Mac Pros will run it fine even on the cheapest version.
For large scale fleet battles I'd go for the 24" iMac with maxxed RAM or a MacPro with Extra Ram and maybe a better graphics card -----------------

I'd get a Mac Pro (late 2008 / 2009 ) if your going for used. It's going to make life easier and give you more upgrade options over time (RAM and new graphics cards as they become available)and this is really important for a machine which is prob not going to have a warrenty and your not going to want to spend another 350 ish on one.
iMacs are great when you buy them new, 4 years warrenty cover then your prob gonna buy a new one. iMacs are laptop compents in a sealed case. User upgradeability is seriously limited, if it goes wrong you better be Mac certified or get ready to spend out mucho monies.

Just run EvE via bootcamp. There is really no point looking for preformance within OS X. All macs but macbook air will run EvE pretty well through boot camp.
