Say you have a one year skillplan made up and your remap is available. You open up EVEMon and have it calculate the best arttibutes for the the next year of training.
Now consider that the skillplan is rather mixed attribute wise. Remapping the way EVEMon suggests would considerably slow down the training of a certain number of skills, while your current attributes are ideal for them. What do you do?
Do you remap because those are the skills you want in the next year and that is the fastst way to get the total package in that following 12 months?
Or do you train the skills fitted to your current attributes first, pushing back the remap? This while hoping you can fill the rest of the plan with more skills that would fit your post-remap attributes. All the while slowing down the process of getting the skills you wanted (or at least not letting you choose the order in which to train them) but increasing your overall SP/time.

This, with perhaps some high priority 'other-attributes' skills with the old attributes and some low priority 'these-attributes' skills well after the remap.

I'm lucky in that I'm at a stage where I can spend a whole year on guns ships and missiles, but I could have done this anytime...
I expect you'll find that you can too regardless of your speciality. It just depends if you're willing to make that choice.

If you can't bring yourself to train a year of gunnery, just remap for max (and equal) per and int. Then you can train a majority of relevant skills with a maxed primary attribute.

Except that is not 'maxed' in any sense of the word.

When I got my 2nd account i spent maybe a week getting a training plan organised to include the two included remaps so he's alright.
My first and much older char isn't so lucky, he's got many level 4s done and he's skills are a mixed bag. I've now created a plan to 'fix' my problem via training the skills I want to level 5 on his current attributes then I'll remap for guns and ships plan which will last me over 12 months.
