As the title states I'm looking for a distribution that will let me install eve with the least problems possible (still a bit of a noob when it comes to linux). Thanks for reading!

Ehhmm... actually most of em are pretty easy , it just depends on your personal taste.
And on how they install Wine, but for most they are also easily downloadable and installable.
Pick a distro that you think will suit your taste and just google the distro + wine -> and it will tell you how to install wine
google Eve Online winetricks for all that you need to install eve
install eve .. and you will have it easy to run on the distro you want ;)

Make sure it has an auto-installer of the OpenGL driver for your GPU. It's not fun trying to do that by hand as it has this kernel module that must match your exact kernel build, if it don't match or doesn't install proper you'll reboot to a black screen (or text mode if you are lucky).
One thing I have to do these days, after the proprietary OpenGL driver installs, is edit /etc/X11/xorg.conf and modify the "Screen" and "Monitor" sections to manually open the driver up to something other than 60Hz refresh. Basically have to tell the driver to ignore any info from the monitor about it's capabilities and then specify them yourself. Crazy thing is, it's the exact same specs but just with the driver strangely freed to use it. And the override isn't dynamic so if I change monitors it screws up.
It's a real pain the GPU makers have started being silly with their drivers that way.

Yeah I had tried with xubuntu 9.10, ubuntu 9.10, and linux mint 8 I think it was and I couldnt get it to work at all really. I think the problem is that I'm using an ati card and as far as I know the driver support isn't nearly as good as with nvidia cards.

Running Arch x64 and have only had Eve crash once but that was me seeing how long it would last page flipping the 3d desktop. With Ubuntu I had he lovely PulseAudio fun (hated my intel hda card) and it seemed to crash at random whenever it felt like it. That and I like a distro I can tinker with
The downside is that although Eve seems to run pretty well even on the 64bit incarnation, getting there isn't for the faint hearted. If you're willing to put aside a couple of hours and follow through the beginners guide and the Wiki pages, you can get a running desktop with everything you need.
Edit - I believe you're right about the ATI drivers, iirc they've pulled support for open source and aren't updating the drivers any more. -------------
