I know this doesn't sound like a mac question because i'm running Eve in Parallels. But maybe mac guys can help. I installed Windows7 in Parallels 5 in a fresh bottle. It worked very well. While the mac client can only be run once (without strange workaround that needs double disk space) the windows client can be run twice. AND: On the mac i have 30 frames with all settings on medium/low, in Emulation i have 60+ frames on BOTH clients running at the same time. It worked flawless.
After i deleted the demo of Parallels 5 with Appzapper and installed the Version of Parallels that i bought, everything is screwed. I'm in contact with parallels support, but noone can help me. I reinstalled everything, my last step was to reinstall parallels5, Windows7 AND Eve. Still the same error. So maybe it's something that i misconfigured on the mac? (but there isn't much to configure i guess?
The reason why i ask here is how the buggy grahpics look like. Sometimes there are strange words in the start-screen, once it was "Leopard Wiki" and for the last few times it was symbols and graphics that are used by Eve so should be located in the eve folder. I had a Problem with the mac client months ago where i saw signs and text in clouds in the gas-nebulas in missions sometimes. Since both errors, on different OS (well one in emulation) showed this strange "sings and letters where they really shouldn't be" thing i thought maybe someone knows what the reason for this problem is.

Do you want to tell me that i can find a solution to my problem there because parallels is built with wine components or do you want to tell me to switch to wine because my expensive software has a bug? :D

I didn't even look up info on Parallels. I'd like it if you try WineBottler. I know Eve runs with Wine really well on Linux. I don't have a Mac. I'm interested to know how the framerates compare when using Winebottler.
And this would be at least a temporary solution for your woes.
... Having now read a little about Parallels it's interesting to see there is a relationship with Wine (which I didn't expect at all). Though, by default, at a guess, Parallels doesn't use any Wine functionality (only virtual machine emulation).
To get Parallels to perform Wine's library layering feature you would have to select "Coherency" mode. I'd hazard a guess you've never tried this but I'd love to hear of the results when you get Parallels going again.

Coherence mode only means that the graphics card renders away everything that looks like windows, so it LOOKS like you only run your windows app and not parallels. As far as i know it has no other impact than this graphical magic. It is still the same way of emulation. Parallels Support couldn't solve the issue after 6 mails so know i have 2nd level support ... whatever that means ;)
If i don't get a solution i'll try whine, normally i always made the experience that those freewares can't compare to paid products, but i will give it a try now that you said it runs very well on linux.

I have the same problem, I bought Parallels some time ago and have used it when I've needed to have a second account going. It's been perfectly fine, I've not used it for a couple of weeks and then yesterday I loaded Eve into my VM and I had the same graphics issues that you've described.
I patched Parallels to the latest version today but it's no different.
I'm using XP in the VM, not Windows 7. --

Aaaah, but that's more than just looks me thinks. The blurb makes a point of saying the app runs as if it were a Mac app. That's a pretty big hint, imho.
Wine does not virtualise. The app can directly access the native OS resources - in this case OSX - if it was so programmed. It will be interesting to know if this is the case for Coherence mode in Parallels.
On the subject of freeware, Wine, like most GPL'd code, doesn't fall into the traditional meaning nor use of freeware. GPL's purpose is for commercial application.

I installed the Windows version of eve under Vista running through Parallels 5 and I haven't had any graphical glitches at all.
Using a Macbook Pro (Santa Rosa model), OS 10.6, Parallels 5 and Windows Vista
However I went back to running it natively as I find the frame rate to be a bit better in native mode.

I was running in Crystal mode. I'll try Coherence later

Coherence mode doesn't stop windows, it just hides everything not related to the current application. It's not running it as if it were a mac app, it's just hiding the other stuff so it runs seamlessly on your screen. It's still Windows.
I've tried mine in both Coherence and Crystal, it doesn't make any difference, I still get the corrupted graphics now. --

Parallels second level support now answered me that 10.6.3 seems to have screwed up Eve-graphics. They are on their way of fixing the problem. So anyone having this, it's a known problem and will be solved.
I can not understand the comment with the bad framerate, as i said i have 3x the framerate in parallels compared to the native client even though the native is low medium low and details in parallels are set to high high high in eve.

A quick google of Parallels and Wine only got me 2007 references ... Jumping onto the their website and looking up licensing gets me this - http://www.parallels.com/support/desktop/licensing/ - where there is no reference to Wine at all ... presumably, whatever part of Wine they used was dropped long ago.
So, I guess Parallels has only ever been a VM.

If you look at the Eve installation on the Mac and open up the package contents then you will find something in there called Cider. Cider is used to allow the Windows app to run on the Mac. As it happens it has a root in Wine...
The whole emulation is very inefficient. It heats up the machine a lot and slows everything else on the Mac down to treacle. For that reason I also switched to Parallels. Same graphics problem as soon as I upgraded to version 5. I am running Windows XP from Bootcamp on a 24'' iMac, OSX 10.6.3, and things were fine under Parallels 4.
I hope the fix from Parallels turns up soon.

Wine and Cider are a world apart. Eve on Wine is fast. As fast as Parallels me thinks.
