I thought that I would share some of my recipes with you! Not doing Eastern cookery just yet so sorry if the title misled you lol
Today we will learn how to make a bacon carbonara!
Bacon Carbonara Ingredients: ~300g Pasta ~300g diced / chopped smoked back / middle bacon 1 small onion 2-3 Garlic Cloves 2 Eggs 4 tablespoons of grated parmesan cheese 4 tablespoons of double cream Mixed herbs, salt, ground black pepper Small amount of olive oil 50g butter
Method Place the pasta in enough boiling water to cover the pasta and simmer for 10m or as according to any special instructions on the packet. Fry the diced / chopped garlic, onion and bacon with a small amount of olive oil. Whisk the eggs, cream, and seasonings together in a seperate container.
Hopefully, the pasta and the bacon/onion should be done at around the same time. Drain the pasta and saucepan. Return the pasta pan to a low heat, while keeping the pasta in a collander, add the butter to the pan until melted. Add the pasta back into the pan along with the onion/bacon and stir well. Now add the whisked egg/cheese/herb mixture to the pan and turn off the heat.
Stir and turn the pasta thorougly until the egg has stiffened.
Serve.

One of my regular meals is smilar to this although I don't think it has eggs, and it has some peas added which work well. 2am and now I am hungry.

Ok...
Isn't "bacon carbonara" almost a redundant name? I mean, a carb sauce usually has either pork fat, ham, prosciutto, or bacon as a main ingredient? Just saying.
As for the pasta type, I would recommend a short tube noodle such as rigatoni or penne rather than yer longer pastas such as spaghetti, capellini, linguini or fettucini as the pasta has a tendency to thicken up rather quickly due to the fat and cheese content. Use grated cheese rather than the shaker crap you get in the store...and if you can get it....get the reggianno...but it is kind of pricy.

All the oily virgins I knew growing up were 15 year old geeks playing magic and dungeons and dragons. That also explained the pockmarked faces and backs.

Pasta? .. bleh .. I used to make home-baked pizza I learned from a Greek roomate years ago. Damn easy to make and this guy used copious amount of real Greek olive oil - none of that tasteless over processed stuffs you get from supermarkets.
I'd share the recipe, but it's really a no brainer. Good dough + anything you want for topping & sauce -> bake. This is making me hungry. |

Pepperoni Pasta.
Pasta for 2 1 Pack Pepperoni slices (you can use chorizo, just add a lot more pepper) 3 or 4 large carrots 2 nice red peppers 3 good cooking onions 400g chopped tomatos Tablespoon Tomato puree Paprika to taste (smoked is good) Pepper to taste (cracked black from a proper grinder) Teaspoon sugar
Chop the onion and dice/slice the carrots. Add them to a large pan with a mild spray of olive oil and allow them to sweat down for about 10 mins. Quarter the pepperoni slices and finely slice the peppers. Add to the pan with the chopped tomato and the puree. Add pepper to taste, paprika for colour and taste and finally the sugar.
Allow to cook for another 15 minutes then cook your pasta, recommend conchigli(?) but any shaped pasta will do. When pasta is cooked drain and mix into the main pan for a nice, fairly lean, and very tasty meal.
Can serve 3 with this dish under those ingredients but im sure you will do as we do and go for the massive plateful between 2

U R HAVE STOELNZ ME MEALZ
Drop the carrot + add fresh green chillies and its that little bit better.
Ohh, and double up on the pure and sprinkle with grated cheese (cathedral city if possible)

I adapted this recipe slightly for my dinner this evening (and a few more evenings to come) - I fried some mushrooms and a red pepper with the bacon, and went with extra-mature Canadian cheddar rather than parmesan.
For the pasta I chose wholewheat penne - I prefer the consistency, and it's more filling. --- 34.4:1 mineral compression |

the protein: chicken breast or chicken tenderloins (cheaper). Cubed for more surface area than volume.
the batter: 3 parts All-purpose flour, 1 part cornstarch, 2 tbs salt 2 tbs white pepper 2 tbs garlic powder Mix well. separate out 1/4 of the mixture in a separate bowl - add egg, mix until you get a pancake batter like consistency.
Coat the chicken in the wet batter, shake off excess and coat in the dry batter (the remaining 3/4 of the flour mixture), then deep fry or bake and coat well with oil.
the sauce: 16 oz water 8 oz low sodium soy sauce 1 cup sugar 1 tb corn starch 1 tp black pepper 3 cloves garlic, finely diced or 1 tp garlic powder 1 tb cayenne pepper 1 tb crushed red chili peppers 1 whole birds eye chili's or any type of pepper 1 4oz can of pineapple slices in syrup. (cubed). zest of a whole orange. (D-Limonene, has a boiling point of 176 C/ 349 F) so the orange oil will not evaporate.
mix well in a wok or shallow pan until sauce becomes thick. add the chicken, mix well.
*** temper spiciness to taste. I like mine spicy.
