It has changed from the good old days where you were training (and earning datacores) after you quit? So if you start training a a 40-day skill 2 days before your account becomes unfunded, then you don't lose the 2 days, but neither do you get the 38 days of ghost training?
Obviously cancel all order/contracts and dock up.
Do people sell assets and hold ISK? You have the risk of inflation making ISK worth less. Recent events (e.g. insurance nerf, mineral nerf ) seem to me to indicate that hard assets have more risk than ISK?
Anything else?

You _still_ get RP accruing (for datacores), but there are talks about the possibility of making that also stop. You do get a 3-day grace period in which skills keep training, so in your example, you would have 35 days left when you come back.
ISK is indeed the preferable way to maintain your wealth, since prices of assets can fluctuate wildly. If you keep all your assets, you could come back to either a bunch of worthless stuff, or to a bunch of insanely valuable stuff (not very likely but it could happen). You should probably keep your favourite profession's "tools of the trade" (mission ship, mining ship, exploration ship, blueprints or whatnot depending on what you like to do), but all the rest, liquidate into ISK.
A small portion of your wealth would however better be invested into a few PLEXes (2 to 4 would be the magic numbers), and don't forget to reverse-redeem ONE of them (so leave 1 to 3 in PLEX form in your hangar). Why ? So you could reactivate without a credit card and without external help, just apply the reverse-redeemed plex whenever you like. The other 1 to 3 are there to serve as a buffer (in case there was rampant inflation and even your ISK is now worthless - unlikely, but it never hurts) that you can either sell for extra funds or use to pay for gametime before you get back to speed at a leisurely pace.
