Anybody got a good marinate or technique for grilled beef kebabs? I've tried a few online recipes, and none came out with tasting like real Mediterranean kebabs. Any ideas? |

You need to use goat. I found a dead cat on the side of the road so I -átook it home and put some honey on it and cooked it and then I ate it. Is that bad? do do do dooo... GÖ¬ GÖ½

Mediterraneans use lamb, not beef.
Make up a marinade with lemon juice, olive oil, fresh thyme, paprika, pepper, maybe some rosemary, and definitely some minced garlic. Marinade for 24 hours or more. Grill over charcoal. Malcanis' Law: Any proposal justified on the basis that "it will benefit new players" is invariably to the greater advantage of older, richer players.

Here's a recipe I've used before. List of ingredients below, how to prep below that.
6 tablespoons plain whole-milk yogurt 5/8 teaspoon salt, divided 1/4 teaspoon plus 1/8 teaspoon freshly ground black pepper, divided 1 1/4 teaspoons grated peeled fresh ginger 1 teaspoon Madras curry powder 1/4 teaspoon ground cumin 1 large garlic clove, grated 1 pound boneless leg of lamb, trimmed and cut into 1-inch pieces
Preparation:
1. Combine yogurt, 1/8 teaspoon salt, 1/8 teaspoon pepper, and next 4 ingredients (through garlic); stir with a whisk. Place yogurt mixture in a large zip-top plastic bag. Add lamb; seal and marinate in refrigerator 45 minutes. 2. Prepare grill to medium heat. 3. Remove lamb from bag; discard marinade. Thread lamb evenly onto 8 (10-inch) skewers; sprinkle evenly with 3/8 teaspoon salt and remaining 1/4 teaspoon pepper. Place kebabs on a grill rack; grill 4 minutes for medium-rare or desired degree of doneness, turning once. Sprinkle evenly with remaining 1/8 teaspoon salt.

Living in the kebab country, I'd say it's all in the spices
we use lamb AND beef, not only lamb we sometimes even use chicken
also for a good kebab, DON'T mix yoghurt with anything. Yoghurt needs to be cold full fat cow yoghurt and should be put on kebab without mixing.

Remember that a variety of complimentary spices and meats will give the dish a much fuller, lush taste There should be a rather awesome pic here |

Strange, so many variations of recipes for kebab marinate. I guess every family, restaurant, and grandma has their own version. Excellent, arigato guys!
[And Surfin', I've heard that antifreeze is harmless to humans, but fatal to cats and dogs. Could be an urban myth-- was told to me by a guy considering how to handle the stray cats getting in his garbage cans.... ]
