I have a mac book pro and dont like running eve on mac os. Its not running as smooth as on my Win 7 machine.
What about using sime virtualisation software, install win7 and run Eve in there?
1) Will it work 2) Will it run better then the mac os version 3) Will it run even better as on my Win7 machine?

If you have a real Win7 install, Use it. Virtualisation in not so good at it.
You may want to try Wine of you don't like the official OSX client. It's sure that Wine will run better that Virtualized Win7 anyway.
1>Not sure, maybe 2>no 3>never (except if your Win7 machine is a old thing with a Trident video card.)

I've a MBP and I run eve via Parallels 6 + winxp.
Will parallels do the job? Yes it does. Does it work as well as native? IMO yes.
Downside is it takes up more ram/cpu due to the windows overhead. For that reason I sometimes use osx version if I'm going to be running a lot of apps. I've bootcamp + Win7 installed as well but having to switch over is a pain. I've never switched over just for eve before. Nor will I ever.
Parallels offers a trial. You should give it a go and see how it works for you. Best way to find out is to try it.

I have been using eve on my MBP for 2 months now and sofar it gave me more headache then other games - imo the so called "client' is not stable.
I am now running eve in bootcamp and have better gameplay now.
I tried to run eve on VMware on my MBP but that did not go as I wanted. So for me the advice would be if you have a windows machien run it on that. If you have a mac machine use bootcamp to run Eve.

If your going to use virtualisation to run EVE, then why not just run the Cider bound client and run it on OSX? How much real time benefit in performance are you seeing, if any over the OSX Client?
Windows > EVE Client [Via Bootcamp] OSX > Cider > EVE Client OSX > Parallels > Windows > EVE Client
Correct me if I am wrong, but I'm gonna go on a hunch and say Parallels and Windows use more resources that Cider does.

Have to say that I have a MBP (15") from begin 2009.
When I use the OS client I get a fps of approx 25 - when I have all settings high I get 16-20 - and that is when I use 2 clients at the same time.
Now when using bootcamp I get 50 fps on all settings high with 2 clients active.
