EVE promotes or allows behavior that would be considered a bannable offense in other MMOs. This becomes generally known as one continues in the game.
My experience is that the reaction to the griefing actions remain with people even after understanding this. I would expect that stress levels would still be elevated, etc, after something like a hi-sec suicide gank.
Now, while I've been in higher stress situations than EVE causes, others have not been in these kinds of traumatic scenarios and may be more prone to dealing badly with the stress spike and residual negative feelings. I'm primarily thinking of younger players, but not only them. EVE does have policies that punish griefing in starter areas, but this may actually worsen things as the new player gets more immersed into the game before being introduced to non-consensual PVP, rather than being scared off or not immediately.

WTF are you rambling about? All you talk about is just normal gameplay. If you can't accept these rules for whatever reason and consider normal gameplay to be griefing, stop playing the game and play one which has rules you can live with. It really is all this simple and there isn't a need to make it more complicated. Even a small child knows to do this.
Any negative feelings people get aren't a problem either. They are one of the reasons I love EVE. I love the occasional emotional rollercoaster that only this kind of game can provide. Any game where such negative things can't happen to you aren't worth playing for any extended period of time. It is also a necessary part of the great player freedom EVE provides and a necessary component, IMO, of all living MMO worlds. If it isn't for you, since it remind you too much of RL, stop playing and go play the other 99% of games where nothing matters, good deeds get rewarded automagically and the devs try their best to not hurt your delicate feelings.

This brings forth to memory a Duke Nukem Pinball line... "I've got balls of steel, baby !".
P.S. In case the association was not clear enough : getting "bullied" can occasionally lead to either growing some metaphorical balls or enveloping them in a tougher metaphorical material, and that's a good thing. Those that can't cope... well, there's that button called "cancel subscription". If they can't handle loss in a frikin' online game, I dread to think how they cope with stress in RL.

I would suggest working part time in a flower shop rather than playing eve if you are mentally weak. ~_~

Eve is a game premised by competition.
Its a digital casino with the only exception being you can't cash out your ISK for $. Officially.
The sad fact 13 year old kids (and 55 year old kids) can play it results in 95% of all the nonsense said about it and the nonsense perpetrated within it.
That's something you got to learn to live with! At least until the world realises we let kids gamble with real money for comparatively high stakes in virtual worlds and the damage that can do to their psychological development (wee generation of sociopaths!) that causes.
Which won't be any time soon, or at least, nobody who matters is going to notice this rapid social evolution occuring any time soon. So don't sweat it.
Move along now. Nothing to see here.

How you react to any situation that causes stress is down to the individual, whether it's a loss in eve or a bad situation at work or school.
Ultimately, if you don't like the rules, don't play the game.
