I have been using release 195.36.31 for quite some time now. It has been the most stable release for me. It occasionally produces "red structures", where the blue and green component of a 3D object is somehow missing. This bug could be seen with a few missions in EVE, but it made no impact on the game play.
I have not used any of the 256.xx series.
The releases 260.19.21 and 260.19.26 often caused crashes of WINE/EVE and after only a few minutes whenever I switched the virtual desktop or used the audio volume control keys on my keyboard (which displays an audio volume bar on an overlay and is probably the source for the crashes). In rare cases did it freeze my entire X11 session.
I have not used release 260.19.36. However, it includes fixes for overlays and might address my above mentioned problems.
I am now using release 270.18, which was release just like 260.19.36 only a few days ago on the same day, and it might include the same fixes. So far have I not been able to reproduce the issues that I had with the 260.19.xx releases. ___

EVE gfx settings all high, post processing=off, interval=none. fps=80-100 in station fps=45-80 in space. UI off via ctrl+f9 increases fps by 25-30%. These numbers are with compiz running over gnome.
The only crash/issue I'm having currently is the already bug reported portrait issue. (portrait timeouts causing the client to crash. workaround available for that.)
I never run EVE full screen, rather I use this:
env WINEPREFIX="/home/user/.wine" wine explorer /desktop=EVE1,1920x1200 "C:\Program Files\CCP\EVE\eve.exe"
which matches my desktop rez. The issues with EVE + fullscreen have been around a long time, but with the above setting for each client, running one per virtual desktop, I've had no driver related crashes with EVE in a long time.
I have tested the new version of eve with gnome-do / volume/ and twitter/vlc/mail notifications all overlaying the screen and am not seeing any issues. (As an aside, I was using 260.19.21 and .26 and had no "overlay" problems with the client.)
I'm also using/running EVE's logserver in another space to keep track of issues. While we (Linux users) aren't supported, it is nice to have a tool to verify the why and WHERE's of issues when they happen to the client.

Can you actually over/underclock with the 260 drivers? I tried the 256 drivers a while ago and found that no matter where you set the sliders for gpu or ram they would reset to default after hitting apply. I'm still using the 195 drivers, seems stable and you can actually adjust the clock speeds.

Also using 270.18 on my system, with Ubuntu 10.4 and Wine 1.2 with an old Nvidia Geforce 6600 GT card. Working perfectly so far, with low settings, but game looks good and is very stable. Portrait creator also working.

Just tried that with nvidia-settings tool and it still resets to default on apply. I've never needed overclocking on this card (gtx260 OC) but you're correct.
Driver: 260.19.36

I am now running 270.26 for 1-2 weeks now and it runs stable. No server hang or crashes. --
