Welcome to PvP in Eve.
It's been an utterly shagged matter of blob warfare since the Empyrean Age came along, and focus still lies elsewhere on shiny and ultimately useless crap like Incursion.
What we need is the solid release of Incarna to tide the people over who've been waiting YEARS for it (myself included), then everything needs to stop. New features need to be shelved for one expansion cycle and a MASSIVE look at the state of ship classes, capitals, weapons and PvP in general needs to happen.
I mean, I love the guys at CCP and Eve is pretty much the only game I play, but right now PvP is a mess.
It's stagnated horribly into blob warfare and hotdropping since T.E.A. was released.

EVE is a sandbox where you can do pretty much anything you want. But, if you don't have an objective, you quickly realise that you are just sitting in a big pile of sand. However good or bad (insert mechanic) is, was or will be, that is unlikely to change. -

To the OP!
I've been writing this on the forums for years and years...
Don't let people tell you how to play, just play it the way you like it.
I don't like the ship to ship pvp at all, I just do it when it is required (like in times of war).
I've been playing since april 2004 and not planning to quit any time soon.
My English grammar might be a little off, mainly because I'm not a native english speaker, so i do hope you cut me some slack in this respect and hand me my minus 50 points! ________________________________________________

True PvP is found not camping the gates, shooting the POS, or blobbing up, but rather in the 5-20 size gangs roaming around space seeking out targets like attack submarines in the oceans, doing their best to avoid detection and getting the jump on their prey... or running as soon as they realize they're outmatched.
That's where the fun is. I believe "you're doing it wrong" is the most apt phrase that could describe the OP's experiences.

They don't defeat larger blobs ONLY because of what they do on the battlefield - they had to organise that strategy, and then make sure they wound up in a position where it would help them.
You like missions and plexes BECAUSE they are (reasonably) predictable and 'balanced', everything PvP is not. If you want to make a real effort to learn PvP you have to drop the mindset that life is supposed to be fair, and start trying to figure out ways to make it unfair for other people.
I wish i could up-vote this 100 times! This is what EVE PvP is all about. Carebears don't understand that superior tactics win every time. The ship fitting can sometimes only play a minor role.
I get sick and tired of noobs claiming they can't compete against 5year old vets. Its bull! With the right mindset and solid tactics you can take on nearly anyone. This is the whole reason i play EVE, because tactics actually DO matter!

I think PvP is fantastic and should be the ultimate goal of all other players but me. As a highsec CareBear the foolish sacrifice of ships by PvPers just fattens my wallet. Now that Gankageddon is over it's time to dust off the orca and fleet of hulks to work on increasing the stack of PLEXes and spare ISK. This game is anything you want it to be but the most important thing is for it to be FREE.

I'm not great in PVP but I made sure I joined up with people who are good at PVP. We have a blast roaming in small gangs often taking on larger blobs and coming out of it pretty good.
TL:DR - EVE is as fun as the people you play it with. If you want to have fun at PVP join up with people that enjoy it and are good at PVP.

PVP is fine usually. BVP (blob vs person) to pad killboards just seems to be fun to some people though. To each their own I guess. Personally, I think the points system on a KB should be based on the size of the ship X the # of guns it had equipped divided by the ratio of offensive & defensive fielded.
1:1 BS with 8 guns each = (5X8)/(1/1) = 40. 2:1 Frigates vs Destroyer = (3X5)/(2/1) = 7.5 to each frigate pilot. 20:1 Blob vs BC = (7X4)/(20/1) = 1.4 to each in the blob 30:1 Blob vs Industrial = (0X0)/(30/1) = 0. In Null, the reclaimed goods or halted supply lines = the reward. 30:30 Blob vs Blob (average ship size 4) = (7X4)/(30/30) = 28 to each player per kill.
But, the KB scoring is outside of Eve's hands anyway.

Yeah PvP isnt the strong attraction of eve for me. I like the notion that one must be on their toes at all times. The actual pvp (if it happens) is one sided or kinda bland for the most part. Web scram orbit... It's not all like that, but a good portion. On top of that it's dice rolling rather than skill. You can say there's a skill, but really there's a methodology to pvp more than anything.
Eve's selling point is really that you are afforded the opportunity to have so many options, and so many options others have to ruin your day.
But pvp...there are far better pvp games out there.

Ok , ignoring the reasoning but just accepting that you don't want to pvp
The game would still be fine for you if you looked at those attacks on you by players as being by powerful swarms of rats that must be a avoided by all sorts of methods built into the game like where you locate , the vital need to be aware, to use scanner and local and align. To use mmo aspects of banding with other player as a survival advantage etc
The potential of being ganked is just part of the game environment just as having gangs of sleepers roaming gate camping. War deccing etc
Complaint is complaint about the difficulty level of safely doing what you want to do in the game
You might find killing others boring or unchallenging but that doesn't mean that the danger doesn't add content to your eviroment
Pve is players versus eviromment. The guys trying to kill you are part of the environment

Now onto your gripe about pvp itself
Basically you're saying that you don't like the type of pvp a lot of people enjoy well enough to spend dozens of hours a week enjoying (most of them would welcome enhancements but still choose eve over hundreds of alternatives)
But. You want to live next to them instead of doing all sorts of other content elsewhere.
Youre asking that all game content should be available everywhere in the game sort of like demanding access to endgame raid content in other games without doing all the aspects of raiding you don't like
Theres plenty of things to do in the game. Not all will suit you

find something to do my friend, i know of a few players that take alot of satisfaction in knowing their isk/modules/whatever is doing xyz
i also know of one that now works for a logistics company.. using the information gained and gathered from trading on eve's marketplace as experience (all saved and logged)
many things to do. and despite my personal love for hunting people, its not something i do exclusively.
