And why? im new to this industry and dont have a complete understanding in the operation of control towers. So which ones are more popular and why?

The choice which tower you need to use depends on the purpose and what modules you want to online.
Why? ... It¦s because every tower have differences in CPU-/Powergrid-Output and various Bonus.

What does it mean that there is a "Race" bonus. Does the CEO anchoring the tower have to be of that race to get the bonus?

It means some towers are faster than others. Minmatar are well known for their speed designs, but with a red stripe an Amarr tower becomes hard to beat.

Towers give bonuses based on the race that designed them, there is no connection to player race.
Amarr towers give bonuses for laser batteries, Caldari towers give bonuses for missile batteries, etc. Each racial tower also varies in CPU, Powergrid, Shield, etc.

Amarr: * Most grid, least CPU. * Least shield. * Good for deathstars, as all that grid allows for a lot of turrets (but limited EWAR). * Bonus to laser optimal allows multifrequency crystal usage without range penalty. * Has a mostly useless silo bonus, in my opinion. * There are 3 faction variants, two of which are identical. * Lasers only do 2 types of damage, so it isn't unusual to have some projectile turrets as well for explosive and kinetic damage.
Caldari: * Most CPU, least grid. * Most shield. * Has so little grid that turrets should not be used as a primary defense, instead it is an EWAR monster. * Good for hisec industry, resist-stars, or ecm-stars (ECM is useless against dreads and super-caps). * ECM bonus is more of a penalty unless you have lots and lots of ECM (and preferably faction ECM).
Gallente: * Really only used for reactions (grid, CPU, and silo bonus make it ideal for this).
Minmatar: * Great balance of CPU, grid, and shield. * Great for deathstars or industry.
Use lasers on Ammar, and projectiles on all the others, as all other defenses suck. Pretend that missiles and hybrids do not exist.
