Hi, i've just starting playing eve online but can't decide which race to pick. I found plenty of guides around however since I am not familiar with game mechanics "faster ships" or "uses laser guns" didn't mean much to me. Which side is better for a pvp centric "glass cannon" playstyle?

When I hear the term "glass cannon" I immediately think Deimos (Gallente assault cruiser)
You want good PvP centric ships though I'd go with minmatar. Much more skill intensive than the other races due to flexibility in fitting

pretty much comes down to playstyle.
Amarr ships are armor tank and use lasers Caldari shield tank and use missiles Gallente ships use drones/hybrid guns and tank armor Minmatar use guns, missiles, drones and can either shield/armor/speed tank
Keep in mind that every race has ships that go into other areas (drone bays, ECM, neuting) and the race you pick only affects what race's noob ship you get and what frigate you can fly right off the bat.

As far as glass cannons go, most races have a few ships that are feasbile as glass cannons. What most have in common is that they pack a weak shield buffer tank (ie. 1 shield extender and 1 invulnerability field hardener), tackle, and prop module, utilizing all the low slots for damage modules, tracking enhancers, and/or speed upgrades like nanofiber internal structures.
Of course you also have true glass cannon ships like stealth bombers, meant to sneak about and nail targets without being shot at (preferably), or to carry just enough ewar (damps, etc.) to making hits come infrequently enough to survive an enemy's defensive fire.

Well "hard to master" or "it takes longer to train the neccessary skills to fly all their ships decently" isn't the same ..
Rockets and lasers: Amarr use those, the black T2 ships all use some form of rockets/missiles and for the rest they're all laser boats. Their low level ships aren't that impressive (Punisher is ok) but the further you train them the better they get, especially for PvP.
Personally I've trained Amarr (armor, lasers, (short range) missiles) and Caldari (shields, missiles) ships. One disadvantage of laser ships is that they only do Em and thermal damage (but a lot of it) but in PvP everyone has omni resists anyway. Caldari are the best for training mission runners (income) relatively fast and rockets/missiles can do all damage types.
Notice though that your race is irrelevant to the ships you can fly. Every race can train for every other race's ships; the few race specific skills you get at creation are hardly worth it to pick your race for. So I'd basically pick the face you like most.
Also keep in mind that all races more or less use drones; Gallente may be THE ultimate drone users but Amarr are second in drone bay size. Unless you plan to spend your EVE time flying frigate sized ships and Tengus, training up drones is pretty mandatory.

I chose to fly minmatar ships so cross training into the other races was literally just their ships and weapons because I could already armor tank, shield tank, use drones, & missiles (so caldari was just the ship skills)

Your choice of race affects how your toon will look.. and a the first little time you spend on starter career missions. Any character can train to fly the ships of any other race without penalty.. so just go with what looks best FYI Minmatar have the best tattoos.. though some amarr are ok.

This is accurate, but every race has an exception or two.
For example the Amarr have the Curse, which doesn't really work all that well with lasers, but can fit an effect nano/shield tank and does most of it's damage through drones supported by energy neuts.
Also Caldari ships have a number of ships that are optimized for railguns, such as the Moa, Ferox and Rokh. The problem is that these ships tend to be horrifically bad for most purposes, so they tend to get ignored. and further more why do i even need a sig? |

All the Caldari ships with hybrid bonus are passable blaster boats, though yes they were intended for rails.

You get a few hours of SP in some sometimes completely useless skills. Most of the core skills are the same too. You can just cross train everything and by that point 2 lvls in one race's frigate vs. another doesn't make an ounce of difference.
Also, you might just want to do the starter missions for all the factions anyway. More ISK, more standing, and free books & ships.

The only thing race really matters for is, character appearance, role playing and which factions space you start out in.
After that - what matters is what you do.
