I'm about to test EVE in realtime and will post results if I can squize a bit more juice for EVE. Here How I will proced.
First I will do total CPU isolation : CPU 0 and 1 : All IRQ + Kernels threads CPU 2 and 3 : System process (including users applications. CPU 4 and 5 : EVE (two client, 1 par CPU)
The kernel is Linux 3.0 with Realtime patchs. I found Wine patch to make it RT aware.
So in theorie, The fact that the EVE CPUs don't have others thing to do and the fact that EVE will run on the highest priority (Under the kernel but it's on another CPU soo..)
I may get some more FPS and lower latencies...

Was it benched successfully? I'm interested in this =) Also, what cpu/gpu/sys are you operating within?

Yes!
I can use firefox with my 75 tabs, compile stuff, etc... the EVE FPS line stay straight +/- 1 pixel (between 59.90 and 60.10 in my POS..
For now it's setted this way: IRQ : CPU0 Kernel threads + process : CPU1 - CPU4 EVE : CPU5 (I tested with only one client as the other is out of sub)
VGA, SOUND and USB IRQ RT priority 80 EVE RT priority 70 I setted some of the kernel thread at 75
OS configuration : Funtoo Linux Kernel : 3.0.0-rt3 Xorg : 1.11-GIT libdrm : latest GIT mesa : latest GIT
Systen configuration: CPU : AMD 1055T @ 3.8Ghz RAM : 16GB DDR2 800 Video : AMD Radeon 4870HD Sound : Sound blaster Live 5.1

Holy $h!t, nice system.
Also, good technical work. Unfortunately doesn't help my dual-core setup.

Search for "Ravow's Adventure".
Does your Wine patch implement the processor information calls? What version are you running, and are you running any Microsoft goo via winetricks?
How are you forcing the processor affinity?
