I keep reading about the "2-2-1" Drone setup but I have no idea what it is, I did Google it and got more references to it, but no explanation. Can someone clue me in here?

So OGRE - OGRE - HAMMER - HAMMER - HOB is pretty common; it uses max amount of the available bandwidth (25+25+10+10+5 = 75)
If you went OGRE - OGRE - OGRE you would still reach 75, but swapping 2 hammers and a hob for one Ogre actually means less DPS.
Where you can fly a full flight of any size (125m3) then you're best off picking your flight to match the target speed and size. -------

I've just been carrying 5 T2 hammers for cruisers and 5 T2 hobs for frigs in my Raven... Have I been doing this wrong or shall we say "not optimal"?
Also, do you mean bandwidth or drone bay capacity?

Drone capacity governs how many drones your ship can have stored.
Drone bandwidth governs how many drones can be operational at the same time.
The two can be the same, but often they are not. Example: having 50 m3 of drone bay, but only 25 m3 of bandwidth. This means that even if you carry 5 medium drones (10 m3 each with 10 bandwidth) you will be able to have them in your ship, but you will only be able to activate 2 of them at a time (the third would require your ship to have 30 bandwidth which it does not).
There is absolutely nothing wrong with not using all of your bandwidth. Large drones might do more damage on paper, but they cannot really catch nor hit smaller targets. So if you mostly face smaller targets, having only medium or light drones is actually better overall.
Try out all setups and see which works best for you in your situation.
A general rule of thumb is: a flight (flight is 5 drones) of light drones for frigates, a flight of medium drones for cruisers, and a 2-2-1 setup for larger targets (that is for ships that have 75 bandwidth and enough drone bay to carry the flights). Mix and match as desired depending on chosen ships capabilities.

You've been doing it just fine, the only reason to not use a "5 of each" system is if your bandwidth isn't the logical 25, 50 or 125m3 (light, medium, heavy). Several ships get a 75m3 bandwidth which is a bit "in between", so only launching 5 mediums leaves 25m3 unused, but using 3 heavy isn't ideal either. To optimise 75m3 (against larger targets) you then have 2 heavy, 2 medium 1 light, this maximises your paper dps but doesn't necessarily do it in reality.
The 2-2-1 system is mostly used on pvp fits to maximise dps on paper but in reality it can cause issues based on the size and speed of the target (that setup won't do much against an intie for example). If you see anyone fitting 2-2-1 on their PVE fits just ignore them.
