So I have all of the support skills needed for both, I just need to buy the carrier skill book for that race. Both have their strong points.
Any corp leaders willing to recommend one? Which are seen most in fleets? Which ones are wanted but not enough available?

Personally...I'd go niddy. Will in fact do this. Caldari x-train to minny. Want the niddy/nag combo. NIddy a boosted pos repper to be of use to the fleet when not in pve mode. And spoke to enough phoenix pilots who hate it to say...meh...I'll take a 50/50 gun missiles split on the nag. If only to have a half decent chance to be the final shot on station to claim it for giggles and grins in a bash.
Just running out my large projectiles now to have the fleet bs for minny done. Then the fun minny bs 5 and such trains begins on the combat char.

Judging by your question, I assume you're intending to shield tank. Leaving aside the issue of whether that's a good idea or not, I'll just say this.
The Nidhoggur doesn't really shield tank very well. Shield tanking itself is ludicrously CPU intensive, to the point where even the Chimera struggles with it. If you're looking to fly a shield carrier as a shield carrier, you need a Chimera.
Honestly, the Nidhoggur works best when it can run a different tank type from the gang it's supporting -- local armor reps and shield transporters or a local shield booster and remote armor reps. This is an interesting triage option, but the Nidhoggur doesn't really work in triage, either, for a whole different set of reasons.
Before you train for it, I'd work on all the various support skills and prerequisites, putting off the racial specific skills for last. That way you can put off the decision until you know more specifically what you need. In particular, whether you actually want to shield tank your capitals. It's generally not done.

If you already have armor skills, you would likely be served far better by training for the Archon. It's more generous on fittings and capacitor, has a much nicer slot configuration, and gets a better bonus for your carrier skill.
In the context of the time it takes to train capital ships, getting a battleship skill to 5 is a joke. Choose the right capital ship the first time. (And if you already have Caldari or Minmatar battleship to 5, then that opens up the Nightmare or Bhaalgorn. Both are awesome ships.)

My corp wanted me to train for a Chimera, so I did. The corp then bought me a Chimera to use.
Ask your corp/FCs what they need.

Archon: Biggest tank of all. Armor/energy RR bonuses which makes it strong for armor tanked carrier gangs and even more so supercarrier support. So great carrier. Chimera: Same thing as the Archon, just with shields. Good pos repper. Thanatos: Okayish to bad tank, but great DPS + RR bonuses. Great gank carrier, good carrier/supercarrier support ship. Nidhoggur: Terribad tank (like seriously) plus the great bonuses make it the most vulnerable carrier of all. Whenever you see someone in a Nidhoggur, watch him go down first.
Edit: All of them but the Chimera are armor tankers. If you tank the Nidhoggur for shields, you're plain dumb.

Chimera is the strongest shield carrier around - The Nidhoggur on the other hand is very versatile and works both with shield tank and armor tank. Both of them look very pretty... I never regret training for Nidhoggur - Only thing it doesn't look good at is Triage carrier... The Archon and Chimera seems much better at those. -
