If you don't care - it doesn't matter, except that you will have trouble entering Minmatar Space if they get bad enough.
If you do care - do missions for the Minmatar.

Upon reaching -2 only level 1 agents of that race will speak to you anymore regardless of personal or corp standing. At -5 and lower you will be hunted by the faction police.
Edit: a rather quick way of "fixing" it would be to train a few levels of diplomacy unless you have a very bad standing.

It makes it harder to do missions for Minmatar corps and if your standing gets low enough, Minmatar security forces will fire on you whenever you are travelling in Minmatar space. You could repair Minmatar standings by doing tutorial missions, data centers, epic arcs, COSMOS, and storylines. You could've missioned for Caldari without decreasing Minmatar standings by declining all missions that require you to kill Minmatar ships and by declining all storyline missions.

First of all, the only consequence to having a bad standing is that you will be attacked by the police if you enter minmatar space. If you don't mind staying away from minmatar space, you can let your minmatar standing drop as far as you like.
Second, you can minimize the impact of bad standings by training Diplomacy. You can also avoid the worst of your standings losses by not accepting missions which have you kill any of the empire faction's ships (so only accepting missions where you kill rogue drones or pirates).
Third, you are really only hurt if you can't enter Caldari space, since that's where Jita 4-4 is. If you can't go to Jita, acquiring goods becomes very difficult. ----------

People are forgetting that doing SoE missions will raise all standings.

Not exactly. You will gain 48% with Gallente, 15% with Minmatar, but you will lose 6% with Amarr and 1.5% with Caldari (among other derived changes). Yes, the losses are very small, and the Gallente derived gain is rather large, but you're still not going to get a positive towards all.
The only two factions that have positive standings towards all four major empires are CONCORD (for which you can only run two missions ever) and The InterBus, which have no storyline agents, which means there is no faction for which you can reliably run "important" missions to raise all (empire) standings. _
