Is there a way of displaying the damage type being received/dealt as well as just the damage amount? I'm talking about the rolling combat text/damage that appears in the middle of the screen during combat.

Combat log has an overview of what is displayed in the rolling notifications.
So you can look stuff up there and it will be more static. |

And the answer is no. There is no way to tell the exact damage types. You can make educated guesses depending on the type of weapon being fired at you though. |

Nope. Knowing what type of damage you're taking is a matter of personal experience / knowledge. Here's some guidelines:
- Lasers: EM + Thermal, with an emphasis on EM (more Thermal the shorter range the crystal is).
- Hybrids: Thermal+Kinetic, usually a pretty even split.
- Missiles (telling by ship): if it's coming from a Hawk, Hookbill, Manticore, Corax, Cerberus, or Drake, it's probably Kinetic. If it's coming from a Hound or Talwar, it's probably Explosive.
- Missiles (telling by missile): Mjolnir = EM; Inferno = Thermal; Scourge = Kinetic; Nova = Explosive. Look for the word, and you know the damage type. Other missile ships will simply deal a single "pure" damage type.
- Drones: Amarr = EM; Caldari = Kinetic; Gallente = Thermal; Minmatar = Explosive. Gallente (Hobgoblin, Hammerhead, Ogre) and Minmatar (Warrior, Valkyrie, Berserker) are most common.
- Projectiles: Variety, with possible focuses on EM, Thermal, or Explosive, with a little auxiliary Kinetic damage on each one. Best to assume they're hitting your weak spot at all times.
- Autocannons from obnoxious distances: mainly Explosive. It's Barrage ammo.
In PvE, you can just use this table.
