Anything non-instant.
Real coffee beans, dark roast. No major preference as long as it's coffee. No milk/cream (typically). No poison sugar/sweetener whatsover. Just plain ground coffee and hot water.
Occasionally, I throw in a cinnamon stick, chocolate powder or boiled egg shells.

It's an acquired addiction, just like drug or tobacco addiction, it's very hard to kick. Re-training the tastebuds isn't easy for the average person. Requires a lot of initial willpower until the tastebuds re-adjust.
Used to put sugar into everything (which was years back), but nowadays, if I put sugar into my coffee, it puts me off immediately with a cloying aftertaste. I don't even put sugar to my pure cocoa drinks. Used milk instead. Absolutely love the creamy bitterness taste.

French press with fresh ground beans makes the best cup of coffee imo... the oils that a paper filter would catch make for a much better flavor that drip coffee.
I usually add splenda and milk to my coffee. If I get coffee while I'm out I usually Starbucks Pike Place Roast. While I don't like coffee that's very lightly roasted, I've never been fond the bold/dark roasts. http://www.youtube.com/watch?v=ZTzA_xesrL8 |

Coffee has a lot of flavorful compounds and there's more to it than just a bitter taste.
You may as well ask why people bother eating chocolate, if the even more bitter cocoa has to be mixed with milk and sugar before people will eat it. Or yogurt if it has to be sweetened with sugar or fruits.

That's right, I stopped putting sugar on my milk and now it feels weird whenever I put it again. Anyway I'm not exactly a sweet tooth, as if three generations of diabetes type II weren't enough to convince me to take care with sugar, carbohydrate and fat. I've become a big fan of Costa Rican coffee. I also enjoy El Salvadorian coffee.
I buy the beans green and roast about a pound at a time. Thats about a weeks worth.
I home roast them light and cool them quickly. Dechaff and let them sit overnight to free gas.
I then grind them (as needed) daily and Automatic drip.
I drink it black.
