T1 production spreadsheets are super easy, starting to look at T2 but there's a lot more to track, both in terms of items and stages.
Also, I'm told the only way to really go about it is to both invent and produce the BPCs, that is, not a large market to buy/sell the BPCs? |

basicly the same, only difference is that you have to do a seperate tab for T2 comp. and add a multiplicator for the chance based invetion stuff.

sort off, there are dudes making big money with that, but the market of T2 prod. is A LOT bigger, but rly not that profitable as everyone is doing it after the decryptor change. |

You're correct in that there isn't a huge market for T2 BPCs, mostly because if you have the skills to manufacture an item you also have the skills to invent the BPC. There are people out there who will buy T2 BPCs so it's not impossible to get rid of them. I believe T2 drone BPCs move pretty easily.
As for tracking your stuff with spreadsheets, I'd suggest using 'ISK Per Hour' and creating a shopping list. What I do is make a shopping list with everything I want to be able to make at anytime with at least 200-400 runs for each item. I save that list to a .CSV file and import it into a spreadsheet along with a .CSV export from jEveAssets with my custom filters. With some VBA magic and conditional formatting, I can see what items I need to make and buy to stay stocked up.

Screenshot for reference T2 drone BPCs are trash on contracts though, price of the BPC is almost equal to the profit on them. The same usually applies to other BPCs as well. The only T2 BPCs worth buying instead of inventing (even with low invention skills) are ammo ones because the inventor cant manufacture all of them and sells them at prices that are actually reasonable. As for t2 drones it takes about 500k to make a t2 drone BPC, and they often sell for 2.5m. With even terrible skills you are tripling the profit by inventing on your own.

Contracts are a hassle... so much easier to just invent it yourself. |

Just use one of the many 3rd party tools? Such as IPH. |

There's definitly a market for t2 BPCs on contracts, mostly for mods. The only thing is that 1h15mins each wave may burn you out quickly. |
