Like people are saying, it's really not for us to tell you what is fun. That differs from person to person.
Myself? I'm about 5 weeks in, and I really enjoyed just learning a bunch of different aspects of the game. And each time I think I knew something, I discovered something else to further my understanding.
I started out learning more about industry/crafting - you can still make ISK as a new pilot if you find good items to craft. Occassionally, I'll do a mining run - not just to look at my lasers burn away at rocks, but to multi-task - review your product pricing on the regional market to make sure your prices are still competitive - or take this time to read up on a new game concept on my second monitor.
I enjoy setting up my logistics train (where to bring my ore to reprocess, bringing those goods to where I manufacture) etc. and setting up some spreadsheets to manage my costs: profit.
So, that is fun for me.
But, I just set up a second account to train up some new pilots - maybe a hauling alt, a PvP focused toon, and an explorer. I might split skilling time amongst these pilots and just pick up one of them if I am just in the mood to do PvP or explore.
This is probably a good reminder - DON'T do things to try to maximize your ISK earned/hour if it makes you do boring stuff. It's a game. HAVE FUN! I don't care to compete against the tycoons out there or feel bad if I am not doing something perfectly optimal (although, I will enjoy learning how best to do things).
Just try things out and see what you like, and don't be afraid to switch between things, especially since you're a new player. There is plenty of time to catch up with the vets once you know what you really like after a few months and then consider specializing (and/or getting another account).

OP, hauling can indeed be fun - and profitable - if you tie it to trading in lowsec or npc nullsec.
1. Find a good market in a dangerous place (not highsec)
2. Determine which items to sell
3. Buy them in highsec (Jita is fine)
4. Haul them to the low/null market of choice. This is like 'smuggling' because almost every single player you'll meet will try to kill you.
5. Sell them
6. Profit!
As you gain experience, you'll sell better stuff in better places, fly better ships, etc.
If risky space trucking is your thing, you can do it as much as you like in EVE.
Also, try pvp. It's better :) At the very least, knowing how to kill stuff will help you greatly towards notting getting killed yourself! Make space glamorous! Is EVE dying or not? Ask the EVE-O Death-o-meter! |

Everyone is different. Because I like "engineering challenges" so to speak, I have LOADS of fun figuring out new ways to do old 'content'. Last week a did a guristas 9/10 with a couple of MJDing Myrmidons just to see if I could. I use an ECM burst on my anomaly ratting Machariel to keep aggro on me and off my expensive Geckos, I have a whole slew of pve support ships that use FoF (auto-targeting) missiles to help me in pve (and when someone comes to pvp me lol) like this one I use to support my 0.0 mission Tengu:

And though I can't claim credit for it (I stole the fit off a guy in the Ships and modules forum), I have fun flying my nullified, cloaky proteus that can tank 800+ dps against guristas and serpentis rats AND deploy 5 light drones, do 500+ dps and is cap stable with a micro warp drive on (if it weren't for blasters really short range, I'd call it overpowered lol).
For people who like to tinker, the game is ENDLESS fun. |

Most things in this game "can" be fun in my opinion. Hauling? In my opinion, not fun until you manage to get past gate camps with that billion dollar cargo. Mining? Not really sure how that fun for anyone, but apparently some people like it. Station trading? It's funny when someone sells you a 10mn ab for 250m, and you can get thrills when that item, the one doomed for failure that you stupidly put a ton of isk into, suddenly flips the other way and makes you more than you could've ever imagined. I'm still thinking of how ratting could be fun... And pvp? Jumping into that gatecamp, in your frigate and t1 cruiser fleet up against a full force t2 cruiser fleet with logi.. And managing to get more kills than losses. |

What do I find fun? Laughing at funny comments from friends on the forums. Answering questions from new players about how to get started. Taking week old players on low sec roams and getting kills worth 200m+. Fighting a constant propaganda war against the threat of bot aspirancy and periodically ganking people who disagree with me. Running level 4's, sleeper sites and anomolies in an assault frigate (or sometimes even a t1).
My advice? Find a conflict you want to fight in. Make Friends. Make Enemies. Above all, care about what you're doing and pick things that will challenge you or have an impact on other players.

Because they don't know how to do it properly.
Proper hauling is one of a few things.
1) Finding a courier contract that pays you to fly from A to B
2) Finding an item that you can buy at point A for less ISK than you sell it for at point B
The second variety is far more enjoyable, because it involves market research. Nobody is going to tell you, "Hey, check it out! If you haul 1,000 of these mods from Jita to Amarr you'll make a bunch of profit off buy orders!" They'll just do it themselves. Or they'll subtract a tiny portion of their profit and use that to make an open Courier Contract.
And don't fall into the trap of thinking that hauling is just for big, slow ships. Some of the most profitable runs are done in shuttles or Covert Ops ships. I know sometimes it's difficult to realize just how much you spend on incidental things each month or year, but seriously, EVE is very cheap entertainment compared to most things... If you are a smoker, smoke one less pack a week and pay for EVE, with money left over to pick up a cheap bundle of flowers for the EVE widow upstairs. |

I have been having fun exploring lately. I like to dive into a lowsec system and take my chances. My frigate is kind of pricey but it works great. I even bought a couple of those Ore Prospects and have been doing some low sec mining. I don't care about the ISK I make so much as long as I enjoy what I am doing. But in the end do whatever you enjoy... Eve won't tell you the formula to fun... There is no such thing as a fair fight...

Lets see when I first started playing this game I was an industrialist. I did mining, hauling, support roles, etc. I even formed my own corp of miners and we then merged with another corp until it was time to move on. During that time, I ran missions on my own and did group missions. I realized I could make more doing missions (and I found out about the Astarte) so I started training for that. I was fortunate enough to have joined CAS when I first started playing EvE and made friends with the right people because they have an excellent group of players who train new players how to PvP. I got interested in that and began dabbling in lowsec next to our area of operations. That's the moment I realized I loved to PvP and FC (fleet command other players while FC'ing) and haven't gone back since.
Now I do the occasional carebear stuff as my wallet needs it or I just want to do something different when there aren't targets around to shoot. The point is, try things and see what you like. While we can all give extensive answers to your question about all the different things you can (try to) do in Eve for me the answer is alot shorter and simpler. The most fun in Eve for me has always been its community , from the nasty pirates to the highsec carebears. Anything in Eve can be fun aslong as you have ppl with you to make it entertaining. Is mining boring ? Yep to me it is , but i can still enjoy myself while mining when im on teamspeak with the eight ppl. ( thoug truth be told i prefer not to mine myself ).
My suggestion to you is find ppl to play with that you like and you might naturally find an activity you enjoy aswell. |

So much this. It really doesn't matter what exactly you do, as long as you remember that EVE is a social game and most of the opportunities and the fun arise through conversation with other players. Maybe being a pure miner would make this a little harder, since ore is abundant and only manufacturers really need it. Every other profession will eventually have something to offer that is valuable to other players and content will suddenly appear everywhere around you. I'd like to apologize for the poor quality of the post above and sincerely hope you didn't waste your time reading it. Yes, I do feel bad about it.
