So I'm starting a hauler alt, and want to go with a blockade runner first (a Prowler). I've heard that they are "un-catchable" or at least extremely difficult to catch if piloted correctly.
So...what does it take to pilot one "correctly"? What should I be fitting? What skils do I need?
Also, could someone link to a guide that goes over the basics? I've heard about bookmark insta-warps off of stations, are there other tricks to avoid getting caught?

Blockade Runners are amazing ships, especially the Prowler. I use one in w-space as my main cargo ship. So here's a few thoughts from someone who has never gotten caught in a BR.
Mids will be MWD and 2 invuls. I know extenders look nice on paper, but the sig radius growth isn't worth it. It makes someone lock you faster, and deal more damage. If those happen to you in a blockade runner, something went horribly wrong.
Lows are an assortment of cargo expanders and warp core stabilizers. In w-space I run 1 expander, 1 stab, so if someone with a point gets lucky, you still have a shot. I don't really use nanofibers, they're nice, but a prowler already warps like a frig.
Speaking of which, if you want practice for flying your blockade runner, I would say to fly covops first. A Cheetah handles like a fast BR, and if you get used to flying that, you won't lose a 100+ mil isk ship.
And Tequila and freight runs don't mix. Lost a Cheetah due to that. Vodka doesn't mix too well either. Ship sober, or get run over.

It's pretty simple really, use your covert ops cloak every time you start to align and you wont get caught. The exception will be when you are docking or undocking. This issue can be circumvented by having a station bookmark within the docking ring and an insta bookmark straight out from the undock.

I put cargo rigs on mine and then only use expanded cargoholds in the lows as needed for a particular load.
Getting an instawarp BM out of the station in low is very important. With some stations you can guesstimate one in space before you dock.
Tactical BMs around lowsec gates are very useful as I've seen BR's get caught in gate camps before (not sure if it was operator error).
Consider using appropriate agility/warp/defensive implants for your hauler alts.

You said to focus on Agility skills. I know about Evasive Maneuvering. Are there others?

Yeah, I can see the cargo hold optimizers if you're only going to be in high sec. But as I fly in wormhole space mostly, that second off alignment time is a lifesaver sometimes. Here's why:
You jump a gate into null. Its bubbled and covered in ships. You align out of the bubble, then hit your cloak and microwarpdrive, in that order, and you will launch off away from the gate. But you only get one cycle off the MWD, due to cloaking. So you want to be as light as possible and accelerate as fast as possible in order to get to speed quickly and away from your otherwise certain doom.
An extra few m3 of cargo space? Nice. Hauling less cargo, and not losing it all in a fiery ball of tears? Nicer.
That's why my rigs are Polycarbon Engine Housing and Low-friction Nozzle Joints. With spaceship command v, it seriously handles like a fat frigate.
