Okay, I've been testing out the new scanning and I'm quite enjoying it, but I can't seem to find these new exploration things. I don't have astro V, so I can't use all the probes.
Can anyone tell me which probes I should be using and how I go about it?

Exploration scanning is harder than scanning for ships. First of all, you won't get far without the following skills:
[*] Astrometrics level 5 [*] Astrometric Triangulation [*] Astrometric Pinpointing [*] Signal Acquisition
Next, you need a ship with good scanning bonuses. Covert ops frigates are the best, but there are also some tech 1 frigates with scanning bonuses, such as the Minmatar Probe. Adding two Gravity Capacitor rigs to further improve scan speed is highly recommended.
As for probes, you will need to use the racial probes to find hidden deadspaces. Nobody really knows for sure what deadspaces are where, but so far it seems like the racial probe type should be chosen to match the pirate NPCs in a region. For example, I found a deadspace just last night using gravimetric (Caldari) probes in Pure Blind, a region with Guristas NPCs. Load your cargo hold with all four types of probe for that race, Quest, Pursuit, Comb and Sift, and fit a scan probe launcher. Don't use a recon probe launcher, it only works for ship-scanning probes.
When you get to the target system, go near each planet and launch a Quest probe. Quest has a 4 AU range, so if some planets are very close to each other, one probe will cover them both. If there are stargates far away from any planet, also put a probe near each of them. You will now have about an hour to scan the system for cosmic signatures before the probes expire. On each scan, select all the launched probes at once. Don't dock, log off, or jump out of the system, or you'll lose all your probes. There is only a small chance of finding a deadspace on each scan, so you may have to try many times before finding anything.
If you are lucky and find a deadspace signature, you can warp to the scanned location. Since Quest is an inaccurate probe, you'll probably be 1 AU or so away from the actual deadspace; the accuracy reported in your scan results will tell you how far away the deadspace is from the location. Now launch a Pursuit probe, a more accurate, shorter-range probe, and start scanning again. You can't launch a probe while in range of another, so you may have to destroy your Quest probes by right-clicking them in the scanner window and selecting 'destroy probe'.
Hopefully the Pursuit probe will return a location closer to the deadspace, after several scans. Warp there and launch a Comb probe, repeat the process to get even closer, then launch a Sift probe, the most accurate, to finally get within the deadspace grid. The shorter-range probes also have a shorter lifetime, so you'll maybe only get one or two scans before they expire and you have to launch another one. The Sift has such a short lifetime that you can't even use it at all unless you have really good scanning skills and ship bonuses.
