Before you point me to all the known websites and forum posts that say
open ~/Library/Application\ Support/EVE\ Online/p_drive/User/My\ Documents/EVE/logs/Chatlogs
I don't have Eve Online under my Application Support folder. So has it moved in these updates?

You should not have a ~ in front of /Users if you're going to use that path.
Remember that in Mac OS, like Linux or other UNIX-like operating systems, ~ is a shorthand for the home directory of the logged-in user. So:
~/Library/Application Support/
is the same as
/Users/(username)/Library/Application Support/
if and only if your user account is set up to put its home directory in the default location. Note that it is possible for home directories to be located elsewhere, in which case ~ would get you there but /Users/(username)/ would not.
~/Users is almost never going to be correct, because ~ takes you to the user home directory, where usually there will not be a Users folder.
I've logged on to one of our QA Macs and verified that the actual path is:
~/Library/Application Support/EVE Online/p_drive/User/My Documents/EVE/logs/Chatlogs
OR
/Users/(username)/LIbrary/Application Support/EVE Online/p_drive/User/My Documents/EVE/logs/Chatlogs
Both go to the same place.
Note that you may have trouble finding this path for two reasons. One is that ~/Library is usually invisible unless you've either set your settings to show hidden files or you've manually un-hidden the directory. In this case, you can get there by using the "Go to folder" on the Go menu, and typing ~/Library, then hitting OK.
The second reason you may have trouble finding this path is if you've navigated to /Library (which exists at the top directory of your disk) instead of ~/Library or /Users/(username)/Library, which are the correct path. If you were looking in /Library/Application Support (note no ~ or /Users) by mistake, then you would not be able to find the path to the chatlogs.
Hope all that helps.
TLDR:
- Choose "Go to folder" from the Go menu
- Enter "~/Library/Application Support/EVE Online/p_drive/User/My Documents/EVE/logs/Chatlogs" exactly as written, but with no quotes and WITH THE TILDE.
- Go nuts with the contents.
