I do mix them. I started Caldari race as I wanted the Caldari race to fit my character, not ship.
But as I progressed in the game, the Amarr ships were better suited for my style of play, thus I had to learn their skills to pilot them. I really like piloting the Apocalypse, it somehow just suits my style in Eve.
If I had to choose only one race of ships to play though, it would be Caldari. I have Caldari bloodline (Although I think my birth father was Ferengi, we have never met), since I like the Caldari ways of life.
A NOTE THOUGH: When I was growing up in my neighborhood, many of my friends were Amarr. My mother and step-father were not prejudice and I was able to have Amarrian friends. Through my friend's influence while growing up, I not only learned missile tactics in Caldari schools, but my friends taught me the Amarrian way of laser technology. It is amazing what you can learn in the garage just tinkering around. Thus, I was able to learn to pilot Amarr ships early on and was educated enough to adapt to lasers easily. It's nice to have great friends while growing up.

Most players in EVE are just non-racial, only Amarr, Gallente, Caldari or Minmatar by name. I give kudos for people though who like to role play and get into the universe like the players of PIE and Oracle, but really the vast majority of players are not into it.
Roleplaying attracts me but not far enough to stop my primary interest in the game which is to collect ships and things. I keep all ships of all races, so long as they fit my intended purpose.
One day I decided to scout for spawn sites in the Minmatar region. I prefer speed to cover distances, large cargo hold for extended hunts, and I don't like to draw attention to myself, so I choose a Stabber (my base speed on this ship without ABs is already over 250).
So who do I see on the spawn site? A Minmatar with an Armaggedon.

Um I fly Gallente, up to BS, and caldari up to lvl 3 cruiser. Right now gallente ships suck for PvP, but they have a small niche.
If I could fly only one ship type, I'd get mimnitar for sure. Versatility baby. (And speeeeed)

I can fly every ship except the mammoth, the gallente battleships, amarr battleship and minmatar battleship (though i have cruiser level 4 for all races). Coincidentally, the mamoth and those 3 races battleship are also the only ships i dont currently own

I fly Amarr ships. i have maxed out skills for piloting Amarr ships, and love em all. :)
i have the skills to fly any Caldari ship, although don't own any myself. can also fly gallente frigates although don't see much reason too - i got bored one day
Minmatar - never be caught dead in one of those rustbuckets. -----

I'm sticking to one race, Caldari. And I consider myself both powergamer and roleplayer. (though I'm currently having a break)
Reason? Very simple.
By training Amarr ships too it would be much easier to make money. But as roleplayer I want to stick to Caldari. And as a combat pilot I want to be "the best at one thing", not "the second best at two things".
People that have trained so that they can fly 3 or even 4 races' ships are so behind in skillpoints that in a 1vs1 against a specialist player (like myself), they stand absolutely no chance at all (uhm, well, the exception may be with a Scorpion, since they are very unbalanced, and require less than half the skillpoints some other ships require (but on the other hand, such a Scorpion would never be able to destroy my ship, only prevent me from destroying him)).

I can fly Gallente, Amarr and Caldari BS. And I can fly all Cruisers of all Races. I prefer Caldari because I¦m specialised in Missles/EW.
Best Mining Frigatte is: Imicus (Gallente) and Probe (Minmatar)
Best Combat Frigate i would say is: Rifter (Minmatar) and Merlin(Caldari)
Best Mining Cruiser: Thorax (Gallente)
Best PvP Cruisers but there are many: Caracal (Caldari), BlackBird (Caldari) Maller (Amarr) and Rupture (Minmatar)
Best Mining BS: Apocalypse (Amarr), Megathron (Gallente)
Best 1on1 PvP BS: Scorpion (Caldari), Raven (Caldari)
Best Fleet BS: Tempest (Minmatar), Megathron (Gallente) and last but not least the Apocalypse (Amarr)
Best low lvl Industrial: Bestower (Amarr)
Best High lvl Industrial: Iteron MKV (Gallente), Mammoth (Minmatar)
so I can say if you are a Miner or Industrial take Gallente, if you are a Fighter take Caldari. The other both Races are mixed Races.
and @ dalman, I¦m not behind in Combat Skills i think I¦m up to date in all Combat relevant skills because it allway depends on your skillpoints. It¦s right that players which only have 3 Mio or less Skillpoints and flying all Races BS are behind but if you got 4+ Mio points you can be up to date with it.

I fly Gall BS and also used alot of training time to get MKV iteron. I will train Cal BS next then Armar. I can fly all rases frigs and 3 races cruisers.

I'm into caldari ships.
can however fly the bestower but only because I was forced to by some amarr scum. as soon as I saw my chance I ecaped.
it seems im way behind you guys with only 1.7 mill skill points but I'll catch up hehe

Why should roleplayer = sticks to one race's ships.
Some people in RL buy only products from their own country. Some don't. So playing your character either way can still be valid roleplaying.
Me, I'm Gallante and flew Vexor and Thorax but originally wanted to eventually be an EW specialist so also trained up Caldari with a view to end up with a Blackbird or Scorpion. Also had anough Amarr shipskills to be able to fly a Bestower as it's the best (affordable skillwise) Indy. On the way I felt the shortage of missiles in the Thorax and so switched to a Moa for hunting - and it suits my combat style better.
Then I looked more closely at the various BS and realised that whilst a Scorp is great for PvP, for PvE and mining (and "expeditionary" work of any sort) the Amarr BS seemed to have an edge. So here I am now in an Apoc!

I roleplay a genetically engineered Jovian posing as a Gallentean who secretly support Minmatar rebels operating in the Amarr Empire.
I can fly all Gallente ships, Amarr frigates, and have trained Caldari cruiser.
If I'd have to choose one race's ships it would probably be Minmatar for versatility (good PvP and mining abilities), or stick with Gallente (also versatile).
I don't think training 2 races up to BS level when you are still below 4 mio sp puts you behind dedicated one-race players in PvP.
You will have to make choices in what skills to train. Leaving out drones or missiles can account for quite some skillpoints.
The fact that you could be flying different ships will give you a surprise effect someone that always flies the same race does not have. _______________________________________________

I fly only Caldari ships. I have the skills for any frigate, but that's mainly for fun... Maybe I'll get their Cruiser skills one day, for the same reason.
The reasons for using only Caldari ships? First of all, they look cool. That was enough to attract me to play Caldari since Beta, but now it has become my choice to use Caldari ships only. Secondly, I'm a combat player and Caldari have (arguably) the best combat ships. No race has shields to match them, and they are good for both long range turretfights, missiles and EW. Fits my playstyle nicely... Their main lack in ship design is that their ships tend to have few low power slots... but that's ok when you look at how many mediums they have

at moment i can fly all ships except the iteronV and the megathron, i have simply trained up all the skills that make the best use of my attributes, 18 perception and 14 willpower means anything to do with piloting, gunnery, missiles gets trained very quickly, i will have to get implants for intel etc.. before i waste time training electric and other stuff, but that is all in the pipeline

I only trained Caldari Ship Skills. I have no plans to train other races ships. About the only ships I even like from other races are the Tempest and Typhoon, but I dont see myself going that way anyway. So Im gonna do Caldari only it seems. -------

Started off as miner so naturally picked gallente, then Amar for the Bestower. Now Im into patrolling so I got a Raven but will use Megatrhron for support if needed

I fly all races ships.
Caldari - only at lvl 2 frigate cause I'm lazy and don't believe the hype of them being the best combat vessel.
Amarr - BS is training to LVL 2 today cause nothing mines like an Apoc or farms NPCs like an Apoc.
Galente - BS is at LVL 2 because my first ship was a Dominix and my second BS was a Megathron. They were fun... but I've moved on.
Minmitar - BS is at LVL 3 because the best combat ships are minmitar. Bellicose is a better ship than the MOA/BB/Caracal imo for PvP and its cheaper. Typhoon is a Predator that can match any lvl 2 BS in force... and a Typhoon w/ 1400mm Howlitzers are so damned nasty its not even right
One day I will train Caldari to BS lvl 2 cause i like the Raven and Scorp... but I have more nagging skills to train... like some pesky rank 5 skills to lvl 5. Either way... all the ships are good it just depends on your skills. It also depends on what you use it for. Many ships are similar *cough* Megathron and Apoc *cough* and many ships are ahead of their class *cough* Typhoon *cough* so it depends on you as the pilot playstyle.

Uh well I don't have a say in the matter. I am told what skills to train, ships to fly and what to think ;)
Personally I think people should fly what they want to, roleplaying shouldn't limit your fun in any way :)

I went for Caldari because I wanted my character to look the most 'human', and I also liked the idea of being a member of a war-like race. However, I quickly got fed up of having to fly the ugly-ass Caldari ships (not taking anything away in their combat-effectiveness mind) so I saved up and went Gallente.
I currently use my Thorax for mining and pirate-bopping, and my Badger Mk 2 for hauling jobs. I am quite happy with these two ships, although I quite like the look of some of the Minmatar stuff as well. I basically go for whatever takes my fancy, although I still enjoy being Caldari.

I plan to train up all races over time, why not? Each ship has a benefit. I have trained Gallente to BS Level 2 (I have a Dominix and Thorax). Caldari up to Level 2 Cruiser (Blackbird and Carcal). Minimtar is next on the list up to BS level.
