I am Caldari, and fly all races ships. I have level 4 frigate, cruiser, and at least level 2 battleship on every race. I don't see a point in limiting the choice of ships I can fly =) They are all good for some purpose.
If I picked only one races ships, it would be Gallente. They are generally cheaper, look good, make decent miners, and can hold a fair amount of drones. They are perfect for people who like to mine and like to fight.

Me, I'm Gallante and flew Vexor and Thorax but originally wanted to eventually be an EW specialist so also trained up Caldari with a view to end up with a Blackbird or Scorpion. Also had anough Amarr shipskills to be able to fly a Bestower as it's the best (affordable skillwise) Indy. On the way I felt the shortage of missiles in the Thorax and so switched to a Moa for hunting - and it suits my combat style better.
Then I looked more closely at the various BS and realised that whilst a Scorp is great for PvP, for PvE and mining (and "expeditionary" work of any sort) the Amarr BS seemed to have an edge. So here I am now in an Apoc!

I'm a Gallente who doesn't really give too much of a f**k about patriotism, but is really attracted and awed by Amarr culture and their egocentric grandiosity...so he flies the majestic Amarr ships and has tailored his spaceflight style to suit this. Roleplaying a character is a spectrum of possiblities, not a stock template for each race. It is after all called roleplaying, not stereotypeplaying.

Yet my culture has no place for those who don't succeed, so where my nation's ships are outclassed, I will use other ships.
Thus, I generally fly a scorpion or a blackbird (or a merlin/kestrel if the fancy strikes me), both for PvP (I specialize in electronic warfare) and npc hunting. But I have been known to leap into a bestower or a dominix for mining purposes - let's face it, Caldari ships suck for mining and hauling.
If I were forced to choose, I'd probably pick Caldari because of my race, but I'd be tempted to pick minmatar or gallente, since their ships are much more versatile. ------------------------------------------- "My main griveance with the Caldari state was that once I had finished my work for them, they wanted me dead."

My second cruiser was a maller and ive flown around heavy hitting ships ever since, changeing races and ship classes to whatever fit my needs best which has lead me to my tempest and now that im in a minmatar ship unless they nerf em real bad i think i will stick with minmatar ships cause while the blackbird made me dislike ew it did make me appreciate mid slots which the megathron and apoc are lacking in.
To answer your second question if i could only use 1 races ship it would be the minmatar they are fast the texturing on them is great, and they are great heavy hitting platforms with a good number of medium slots for versitility. --------------------------------------

Well, i'm sticking to gallente. Aside from having some of the best looking ships in game, i like hybrids and am turning into a bit of a drones m00k. I picked gallente simply because i liked the background, and wanted to be Intaki - Reborn.
I've learnt some frigate skills, but still prefer my gallente frigates. Even thou i had a vigil for ages, when it went, i replaced it with an atron, still goes fast enough....
I WILL get my dominix into a position where it can be useful at PvP, the slot config on it is just beautiful... :p
The only thing Gallente i can't fly atm is Iteron 5, its 28 days, and i have corp m00ks in bestowers for hauling... -----------

I started out as a runaway to Minmatar space, but I've since gone back to my roots. Once I run out of usefull Scorp/Raven skills to train, I might do up the balance to fly a Tempest properly, however.

they are versatile like my char is...but they need a lot of skills to be operated properly. besides the skills needed to fly my ships (and defend them), i have some other to train. so with my 8mio skillpoints i have nothing to waste on other races BS skills

Amarr and Caldari are the two ends of the scale as far as ship design goes. The Amarran ships take a low tech approach with lots of direct fire firepower, solid plates of armors and lots low slots for improving armor defense. The Caldari ships rely on range, shield and missles with lots of med slots for improving shield defense, EW and missles for offense.
The Minmatar ships seem to be more along the line of Caldari design but balancing out the med and low slots and weapons quite nicely. The Tempest is one of the heaviest hitters in the game with a 5 medium slot and 6 low slot. Makes for the ability to have very interesting loadouts.
Gallente ships seem to be a compromise more along the Amarr school of thought in ship design. Not quite as flexible as the Minmatar in my opinion so I see no need to fly them, since they aren't my race's ship. Next patch may change my view of things.

There is no way I will do the same for Minmatar, for obvious reasons!
Overall I'm pretty happy with Amarr ships, Punisher or Omen for missions, Maller or Armageddon for hunting, Bestower for transporting. And now maybe the Thorax for an occasional mining operation if I don't feel like doing it in the Armageddon...
