Which one would quickly get these level twos done?
Would a destroyer get eaten alive?

Thorax: 150mm rails, AB/MWD, webber, cap recharger, 2 hardeners, 1600mm plate, 1 med repper, energized adaptive membrane
Cheap, and it'll work much better than a destroyer. The plate will make sure a lot of missions are already half over before you even have to activate the repper. Chose the hardeners according to NPC type.
Don't forget some med drones (again, according to NPC)!!
The whole setup will cost you around 8-9mil max, unless you saved up on gallente loot. The ship is fully insurable, so if it blows up, all you lose is around 1.5mil in modules  _______________________________________________

Depends on your spaceship command abilities but I use an Enyo with T2 blasters. It's agile, strong and fast, and because the sig radius is small a lot of ships do minor damage to you. Damage output is high (I've had over 300 from 1 shot before) so most missions are over quickly. I even use it for some level 3's. It's not the cheapest option but the skill training involved is an asset as it gets you on your way to HACs and then command ships. Plus you get to look great in it and ppl say, "hey man, cool ship". Image is everything!  It's Elite with bells on... |

Vexor. With decent drone skills, the drones will rip through frigates faster than you can switch targets. You might want to fit a couple rails or blasters to speed up the demise of cruisers, but overall it's a very good early mission ship.

Here's what I'd use to get level 2's done so I can get to level 3 and 4 really really fast:
Thorax
5x 200mm Railgun II
1x 10MN AB II 2x Large Supplemental Shield Extenders
3x Magnetic Field Stabilizer II 1x Tracking Enhancer II 1x Reactor Control II
5x hammerhead II
Guaranteed to WTFPWN anything in a level 2 mission almost before it spawns =D
With arounf 6-7000 shield HP nothing in any mission will even be able to scratch your armor before either your guns or drones finish them off. And the Tech 2 AB will let you reach that gate faster =D

I would love to use this set-up, but alas my skills are not up to par for this one

yeah with level 2's anyone with decent skills just has to concentrate on gank instead of tank. a light passive tank will get you through just about any level 2 if you have the ability to kill stuff in seconds. I'd recommend using railguns instead of blasters just so you don't have to get close.

Depends on the SP level and also on the difficulty of the mission. A lot of the anti-frig missions can just have a full set of 150mm CC or prototypes, one or another sort of laughable shield tank in the meds along with an AB or whatever else seems appropriate to the mission, and then nanos in the lows. With the burner on the thing really zips around while you shred the frigs along with your drones.
For stuff a bit more substantial, slavers etc, you'd fit a normal tank; I doubt a 1600mm plate is necessary, but a regular armour tank with 400mm or 800mm plus EANs and soforth.
Basically, bring the tank you need to each mission to get through them as fast as possible; by the time you graduate to a BC and level 3s, you'll probably be -very- lightly tanked on most L2s and running them must faster. But don't take undue risks just because great things are 'possible' with the right SP. If you're just starting out you won't might get confused by the old timers who structure tank L4s in a second-hand refurbished velator.
