Which would be the best, in your opinion, and why?

Vexor's increased yield from mining drones and better ability to defend itself without guns puts it ahead of the Thorax.

Thorax can also fit 5 mining drones + 5 combat drones (small), so the mining calculations comes to following:
Vexor's mining drone bonus (+10% per level) vs. Thorax's one additional mining laser....
and, I'm bad with numbers.
Go, fly, with what you think looks cool. :P (Vexor can have 5 additional small drones, if you manage to break few during ops) -- V.H. |

On some fast calculations the Vexor is slighty better, using non-named mining lasers. Suposing Cruiser IV, Mining IV, Drone Interfacing IV and Mining Drones IV (V for the tech 2 calculations) we have: Miner 1: 40*1.2 = 48 Miner 2: 60*1.2 = 72 Mining Drone 1 in Thorax: 15*1.2*1.8 = 32.4 Mining Drone 2 in Thorax: 25*1.25*1.8 = 56.25 Mining Drone 1 in Vexor: 15*1.2*1.8*1.4 = 45.36 Mining Drone 2 in Thorax: 25*1.25*1.8*1.4 = 78.75
Thorax 5 lasers, 5 drones: tech 1 = 402, tech 2 = 641.25 Vexor 4 lasers, 5 drones: tech 1 = 418.8, tech 2 = 681.75
This doesn't take into account mining laser upgrade, I know that you can fit 1 in a tech 2 Vexor, hard to say if there'd fit another one. Thorax has just 30 CPU more, and lasers are already CPU intensive, so roughly will be the same.
So, yes, it all depends on what you prefer to fly. Doesn't matter much.

With one CPU fitted, I can squeeze in 4 mining lasers, an AB, a shield tank and a pair of cargo extenders for over 1000 m3 cargo capacity. It's drone bay is limited but it can still field a full set of miners and have 3 light scouts, good enough for frigate sized rats. Bonus is that its cheap.

You only need enough cargospace for one cycle of the lasers/drones.
The low slots are better fitted with an MLU and whatever coprocessors you need to make it fit.
Mine with buddies, use jetcans. Way more efficient. Find less populated systems and ore thievery is rare. In my 2+ month Eve career so far I've only encountered one, and that was in a noob system -- trying to bait me into stealing it back. I don't mine there anymore, especially since Veldspar and Scordite are the only things there.
I used a Vexor with 4 Miner II's, 1 Survey Scanner, 1 MLU, 3 Co-Processor I's, 5 Mining Drones and 5 medium scout drones for protection. I've since moved on to a Retriever. Note that the drone bonus is related to your Cruiser skill level, so you'll want it up to 3 or 4 at least, not just 2 as required to fly the Vex.
Drone Interfacing boosts your mining drone yield, and Astrogeology as well as the Mining skill both provide mining laser bonuses. You'll need Astrogeology if you want to get into Mining Barges.

The Vexor is arguably one of the best mining Cruisers in the game. It can even beat the Osprey, albeit with extremely high drone skills.
Even without uber drone skills, the Vexor's Drone Yield bonus outweighs the extra mining laser fit on the Thorax. The Vexor will always outdamage the Thorax when it comes to defense, and as an added bonus your mining drones pull in all that much more ore as well.
Don't marginalize the ability to fit a tractor beam to your ship either. Being able to carry your can between high-end 'roids and just have the one thing to pick up is hella useful!

Because I am usually semi-away while mining (browsing webpages in one window while Eve runs in another), I mine in an Exequror. I fit two Miner IIs and two EPS Gaussians, my drones easily destroy any rats in .5 space, and thanks to the extra cargo space bonus I only have to transfer ore from bay to can every four minutes or so, instead of after every minute cycle in a Thorax or Vexor.
However, if you're going to be focused on the game while mining, I'd use the Vexor (as I have for a couple of ninja-mining expeditions into lowsec) for the ability to carry a load of mining drones and a load of combat drones.
