The Amarr - Minmatar conflict over slavery is the easiest to "RP" (and make it clear that you're roleplaying), so as a result the two player alliances, CVA and Ushra'Khan, got the most publicity as "rp alliances". Roleplaying Caldari or Gallente is more subtle, as it doesn't involve shouting things about slavery in local.
Anyway, for roleplay resources or links, you'll have to check the Intergalactic Summit sub-forum or maybe reference this really old list of corps. But mostly the Intergalactic Summit is where it's happening. EVE University only has a guide on how to roleplay, with no list of corps. And I'm not sure if the in-game Corp Finder tool has a checkbox where you can search for RP corps. |

Because amarr are the most distinct and thematically unique/original race. We are the chosen ones tasked to claim all of creation in God's name.

I think the reason the Amarrians have the most prolific group of loyalists out of the four empires is due to the richness of their background, and the religious aspect of their lives. Amarrians view themselves as elite, chosen by God to spread his word and light to all corner of New Eden. They are surrounded by heathens, or worse, heretics (looking at you, Blooders!), and see their civilization as a beacon of light in the darkness. They see it as their duty to conquer (i.e., "Reclaim") planets, systems, and empires from such people, and to bring them the good news (i.e., indoctrinate them), so as to bring them into Amarr society.
Add to that the beautiful golden ships of Amarrian design, their religious impulses, and deep backstories (especially regarding aristocratic intrigue and power struggles), and the Amarrians are a fascinating group to RP as a loyalist to. It also helps that they defend the status quo to a large extent, so unless CCP decides to advance the plot in-game a bit, it favors the Amarrians position in my eyes.
That said, I personally like the Caldari-Gallente conflict, primarily because it feels a lot more like a family feud between two sets of estranged cousins as opposed to "those evil enslaving zealots vs. our brave freedom fighters". Lot more grey to be found in such a fight, rather than a black and white conflict... there's a lot more subtlety and nuance in the Cal-Gal conflict, and subtlety tends not to excite people as much as passion and religious fanaticism does over time.
That said, the real fun in my view is outside the loyalist blocks, where you have a lot more creativity and flexibility to work with.

Uh the minmatar are clearly at fault for defying the will of God and failing to accept their place of subserviance among the stars. Please do not spread pro rustweasel hate speech on the forums by calling the amarr evil, it's ignorant and falsely represents the nature of the conflict. |

-It's the only "religious" race. Even atheists were exposed to religion at some point and (some) secretly want to be (or at least roleplay for fun) as believers.
-It's also armor, and armor is preferred in fleet battle. So a lot of people train amarr ships and get in touch with the story (even if it's as shallow as reading ship description).
-News coverage & events. For some reason The lazor shooters get a lot more than rest. There is just a lot more story to go around to build on.

Few things, really:
The Amarr Empire is a theocratic dynasty. It makes it pretty easy to RP when your faction is governed in accordance with a set of religious principles.
The Amarr Empire is split up into domains ruled by different Heirs. The Heirs vary widely in the manner in which the govern their provinces, in their interpretations of the Scriptures and their role in Amarr society as Heirs, and in the ways they interact with other factions.
The existence of the nobles and Heirs makes for all kinds of interesting court drama. For example, all male children in the Ardishapur Family (arguably the most religious one) have their right hand amputated at birth and replace it with a silver cybernetic prosthetic emblazoned with the Family emblem, in accordance with a punitive Decree made by one of the former Emperors centuries ago. They in fact take pride in this practice because it illustrates how they keep to the traditions of the Empire even to their own detriment.
They are the largest faction. Their only potential rivals are the Gallente Federation and the Jove.
Arguably, they are the most fleshed-out faction and have the most lore content.
TL;DR religion makes for easy RP because you can play in accordance with a set of principles already established within the lore. |

To echo what a lot of people have already said, Amarr is very straight forward in what it is and how to do it. Minmatar is based on tribes which are all different and sub tribes/clans which a lot have differences between them which isn't always agreed upon. Throw into that mix the fact a lot of the info is player made aside from the very basics. Caldari has its perks similar to Amarr (only its split across 7 branches, the corporations, but still follow similar norms). Gallante is pretty straight forward. If your rping do you want to generally jump into a race thats more similar to western culture or? Amarr is different to normal life in the majority of the world and is easier to get info on to actually make a background without having to basically start from scratch. Its simply put, alot more fleshed out from the get go. |

The Amarr are the least familiar.
I've always thought that the races other than Minmatar were loosely based upon IRL countries, but in a nastier form than IRL.
The Caldari obsession with corporatism is like a nastier version of America.
The Gallente mix of corruption and liberalism is like a nastier version of the EU.
The Amarr obsession with a religion that the leaders do not even believe in is like a nastier version of Iran.
Plenty of players feel that Iran is further from their lived experience than America and/or the EU, so those inclined to RP gravitate toward the unique option.
