The way i did it, was simple.
There's a little (un)documented feature in Windows2k, WinXP, Win2K3 and WinVISTA, that it's called SoftLinks.
A SoftLink is a file or directory (or some other file system entity) that contains a path to the linked resource, in a format that the OS understands so it can automatically pass IO operations from the link to the linked resource, invisibly to the program Iing or Oing to the symbolic link.
In a picture, this means:
C:\Documents and Settings\<user>\My Documents\EVE is linked to d:\eve\MyNewEVElogsFolder
When EVE accesses the C:\Documents and Settings\<user>\My Documents\EVE windows automatically and transparently moves all requests to READ and to WRITE to d:\eve\MyNewEVElogsFolder EVE is happy, thinks he's screwing up our C: drive, and micro$oft is happy, because owned another company (CCP) and we are happy, because there's nothing going on in C:

Note: if you want to do this with your entire My Documents folder, you can just right click My Documents, select properties and adjust the location without any extra software. I'd like all my personal stuff on another partition/drive anyways :P

True. However, this breaks quite some programs in my experience, I had nothing but trouble moving this folder. Especially with PCs in a domain but also stand-alone.
A note on junctions (as they're called): They're NOT soft links - soft links is a mechanism in UNIX and part of symbolic links and unlike junctions its really transparent to the software.
This stuff was built in by MS when they made Office for the Mac years ago to get arround some design issues. Its dormant and included in Windows ever since but it has no Microsoft-shipped user interface to access it. Though it can be accessed with freeware and the MS resource kit, maybe it might be best if people only use it who have at least some vague idea what they're doing. Same as with moving this folder, quite some software struggles over Windows junctions and doesn't properly deal with them. --

Why not just use the built in function?
