so yeah I just purchased the Exequror, and I have running 3 mining 2 lasers on the high slots, nothing on the medium slots, and 2 cargo expanders (=at 994 now) and a cpu boost on the low. I'm training cruiser 3 so i get the cargo bonus. what should i put in the middle slots, and is the current setup allright? thanks!

Outfitting a mining cruiser is sometimes a bit tough. Also advice for mining setups is not always as forthcoming as combat fittings for a ship in this forum.
First, if you want to use the Exequror you are on the right track with the fittings you listed. For the mid slots I would suggest installing a shield tank. Perhaps:
1 x Small Shield Booster (Named if possible) 1 x Medium Shield Extender (Named if possible) 1 x Thermal Resistance Amplifier 1 x Kinetic Resistance Amplifier
This will suffice against high security NPC's you might encounter. I would exchange the resistance amplifiers with other resistances depending on where you mine most often. The ones I listed will help in Gallente space mainly.
Alternatively if you're sticking with Gallente ships I would suggest looking at a Vexor for the mining role. It does not have the large cargo capacity that the Exequror has, but it does get a bonus to using mining drones. It also has more CPU that can go towards mining lasers. In addition the drones you will be using for self defense will be more effective on a Vexor. I would suggest something like.
Mining Vexor
Hi Slots 3 x Mining Laser II (or 4 if you have a higher electronics skill)
Mid Slots 1 x Small Shield Booster I (or named) 1 x Medium Shield Extender I (or named) 1 x Cap Recharger I
Low Slots 2 x Co-Processor I 2 x Expanded Cargo Hold I
Drone Bay 10 x Mining Drone I 5 x Hobgoblin I Scout Drone
Both of these suggestions also put you in line with the skills needed for a mining barge if you're going in that direction with shield and drone based defenses.
If you're willing to look at another race's cruisers for your mining and want to focus more on mining laser yield you can look at training for either the Minmatar Scythe or the Caldari Osprey. Both get a mining laser yield per level bonus and both can mount 3 x Mining Laser II's, a light shield tank, and some defense in the form of drones or missiles or both.
You might also take a look at The Complete Miner's Guide, I believe it has suggestions of setting up a mining cruiser as well.

Why 10 mining drones on a Vexor ? Do you expect to have any losses there ?
I'd rather say 5 mining drones and 5 medium combat drones instead... that's almost up to 230 DPS output from drones alone with max-skills Hammerhead IIs, and if you're careful to not lose any mining drones, 5 of them is just the right amount. Oh, and from a Vexor, you can mine over 450 ore per minute from the drones alone (with T2 mining drones).

Its been my experience that on occasion you loose a mining drone when NPC's show up and you have to recall them to launch your combat drones. They have virtually no hit points and don't take much effort from an NPC to destroy. It becomes just a slight annoyance to replace and since they form a sizable amount of your output, as you pointed out, running with fewer than 5 drones does cut into efficiency.
Another thing to note is that light drones are all that are really needed in 0.7 to 0.5 space in most cases versus the NPC's. Arguably light scout drones are preferred when being used against frigate sized NPC's. In any cruiser fitted for mining you're not likely to fair well in PvP encounters regardless of how much DPS you can output. I would save the Hammerhead II's for a mining ship intended to fend off cruiser sized NPC's and larger.
