I've read so many guides and it's hard to get the big picture about a training path. I want to make a character that has some fun utility things and maybe some sort of healing ability? I don't even know because I've never played the game.

Well here is brief description of some of the most important skills.
Capacitor skills: (Cap is life. Some turrets use it, repairers use it and shield boosters use it) Energy Management - Increases maximum capacitor capacity, also increases regeneration a bit Energy Systems Operation - Increases capacitor regeneration
Shield skills: Shield Management - Increases maximum shield capacity, also increases regeneration a bit Shield Operation - Increases shield regeneration Shield Compensation - Lowers the energy amount shield boosters use from capacitor
Armor skills: Hull Upgrades - Increases maximum armor capacity Repair Systems - Makes repairs faster
Fitting skills: Help you put all those modules into your ship Engineering - Increases powergrid Electronics - Inreases cpu Weapons upgrades - Decreases weapon cpu requirements Advanced weapon upgrades - Decreases weapon powergrid requirements
Gunnery skills: Pew Pew Gunnery - Increases rate of fire Rapid firing - Increases rate of fire Surgigal strike - Increases damage Controlled bursts - Lowers the energy amount turrets use from capacitor. Only used for blasters, railguns, lasers and beams. Motion prediction - Helps you hit faster targets Sharpshooter - Increases optimal range Trajectory Analysis - Increases falloff (range beyond the optimal range that has less chance to hit, but still atleast 50% chance)
Weapon specific turret skills: Small energy turret - More damage for small energy turrets (lasers and beams) Small hybrid turret - More damage for small hybrid turrets (blasters and railguns) Small projectile turret - More damage for small projectile turrets (autocannon and artillery) Also same skills for medium, large and capital sized weapons.
Missile skills: Missile launcher operation - Increases rate of fire Rapid launch - Increases rate of fire Warhead upgrades - Increases damage Missile projection - Increases missile speed (which increases range) Missile bombardment - Increases range Target navigation prediction - Increases damage against fast targets
Weapon specific missile skills: Standard Missiles - More damage for standard missiles Rockets - More damage for rockets Heavy missiles - More damage for heavy missiles Cruise missiles - More damage for cruise missiles Torpedoes - More damage for torpedoes Guided missile precision - Helps hit smaller targets than the missile size, this skill doesn't work on rockets and torpedoes.
Drone skills: Drones - Get 1 more drone per level Drone interfacing - A lot more damage for drones! Combat drone operation - More damage for drones Electronic warfare drone interfacing - More range for drones Scout drone operation - More range for drones
Generic: Targeting - Can target more ships Signature analysis - Can target faster
Navigation: Navigation - Makes your ship faster Evasive maneuvering - Makes your ship more agile Warp drive operation - Lowers the energy amount needed for warp Acceleration control - Makes afterburners and microwarpdrives faster Afterburner - Lowers the energy amount afterburners use from capacitor Fuel conservation - Lowers the energy amount afterburners use from capacitor Highspeed maneuvering - Lowers the energy amount microwarpdrives use from capacitor
Learning: All these skills increase your attribute by one per level. (Except learning) Spatial awareness - Perception Iron will - Willpower Instant recall - Memory Analytic mind - Intelligence Empathy - Charisma Learning - Increases all attributes 2% per level
Advanced learning: All these skills increase your attribute by one per level. Need atleast level 4 of the basic counterparts. Clarity - Perception Focus - Willpower Eidetic memory - Memory Logic - Intelligence Presence - Charisma

In the spaceship command category you'll want to learn for a frigate to start with. The path is Frigate->Destroyer->Cruiser->Battlecruiser->Battleship. If you want to move a lot of stuff you'll need Industrial ship.
Attributes make you learn new skills faster. You usually want to choose between armor and shield. You usually want to stick to one weapon type, either turret or missile. Drones are nice, but not all ships have drone bandwidth to use them or can just use few. Most of the skills have prequirements... right click and use show info to view what they need. I left trade skills, leadership and mining skills totally out. Do your own research into them later on. Hell, I left plenty of other skills out too... You'll want to look into them later on. For mining read Halada's guide. Implants are kinda expensive, but can be used to speed up learning. Don't go to a system below 0.5 security unless you know what you're facing. Especially never go in a ship you cannot afford to lose. Mining or missions are good way to make some cash as beginner.

Well, if you don't have EVEMon, it's pretty much indispensable. I'd recommend getting it, looking at the skills, ships, items, etc and play around with what skills you need to use different things. It will help you make your skill training more efficient.
As to what skills you should train, it very much depends on what race you are. Try telling us what race you are and we can offer some better advice.
