Is there a decent tank setup for the mackinaw?
The only tank I can seem to tweak to fit is basically to fill the mid slots with civilian shield boosters which might work in empire but not in low sec.

So no decent tanks while using the mining upgrades for max output.
so it's likely going to be me in my hulk ice mining in low sec, and use the mack with heavy support (given anyway for hauling)

That's the best I could come up with for solo ice work that hopefully stops suiciders. Not yet battle-tested (and hopefully will never be).
The premise is that it can mine ice as long as possible and then dock and dump the blocks for semi-AFK work (mining ice is boring as hell, but sadly my POS devours it), thus I mount the two expanders to be able to hold two cycles worth of ice. No slots for grid or CPU modules, and due to this you need the "Canyon" extender as it uses less grid - there is some CPU left but not enough to field T2 invuls.
I'd also carry five medium drones and keep them deployed. If someone agresses you they might tip the scales. Maybe ECM drones would be good, but I do not have experience with these.

So far I've refused to rig my barges as I often pack them up for fast moving.
If you are prepared to do that an Ancillary Router will allow a T2 Medium Extender, the other rig slot could be used to harden or extend the shield further.
Two Core Defence Econs will allow the T2 extender too but I'd only mount these if they are dirt cheap as another rig slot is better.
In case you wonder cargo rigs do not cut it as hold space stays below 8000.

mac setup. also to tank sucidegankers a bit more:

works best with a logistic .
make a gang of line 3-4 macks spread em out so not 1 bs can smartbomb em all together. fit the logistic cruiser with shield transfers and cap setup, and perma run 1 large shield transporter on everyone.
re quire 1 cheapish pg rig.
U can swap that named em amp for a basic em amp, as the on on the picture cost 20mill or so, and doesnt add any more resistance compared to a basic em amp(not magnetic amp t1) cause of the stacking penalty.
use a noob alt in a noob frig to spawn concord every half hour or so.

Gonna neeg a pg hardwire for this exact set up and im not utterly sure if the two resistance amps are actually available ( cant check due to dt atm ) but you get the idea.
This will give about 21,000 efective hp.
Not a solo afk set up but then nothing really works in that scenario.
