For Ghost Festival contact the erstwhile Aria Jenneth. No idea who runs CAIN nowadays, and since Aria left Omerta I have pretty much no contact with them at all (Aria and me always used to argue... uh, I mean, debate, and Omerta used to get involved sometimes, but since she left I have very little contact with them at all). But I'm sure there's someone who'll provide you with contact details as to who to talk to - and they might have contact details in the corporation description as well.

It depends on what you want. Are you limiting yourself by race, because many RP corporations don't care what race you are as long as you can come up wiht a semi-plausible reason why you are supporting their faction instead.

Omerta have a public OOC channel, "Omerta", sonmone in there will be able to help you to find a recruitment officer.
Cain would be "CAINCOM" channel.
