Hi I have just started using my Vexor to hunt rats and salvage in a 0.3 system.
I have been using my Hammerhead drones to hunt the Serpentis NPC's and they seem to be doing a fine job. I am also picking up more Hammerheads than I am using.
I have also been using 2 warp core stabs which have saved me twice in 2 days. I know many people don't like them, most of all the pirates who can't web me, they really don't like them. On called me a "stab *****"
Can anybody recommend any setups. Preferably one geared towards defence as I am not there for a fight.

It seems to be working for you. I don't see your problem. Only thing I could think of is maybe to add a sensor booster with lock range scripts to help compensate for your gimped lock range from the stabs.

Good to see a ratter who has a clue, I'd go with the sensor booster and lock range script as suggested above and an istab in the lows for a faster align time for times when stabs wont cut it but that may gimp your fit further.
