maybe it is not a good idea to do this in combat?

Not really, what you saw was it. Theres more to dis-assemble if you want but that's the basics for cleaning.
As for Simpler rifles theres plenty. On my Enfield .308 I just have to hold the trigger in and slide the bolt out and I can clean it. When finished I slide the bolt back in and it locks itself. |

It is not so much hard, but being able to do it as fast as possible. You do not want to have to do this in the field, but if you have to you want to be able to know what you are doing and be able to do it as fast as possible.
Others can speak better on the topic, but in the US military being the fastest tends to be a position to have bragging rights in your unit.
Yes there are rifles that are less complicated to disassemble.

The AR 15 is the semi-auto civilian version of the M16 Assault rifle used by the U.S. Military and other nations. It was a somewhat complex rifle and very advanced for it's time when originally built, but has since been overshadowed in both complexity and advancement in recent years. Neither the AR 15 or M16 are terribly easy to field strip and reassemble (although they are not the hardest either).
Generally, though, the ability to strip and reassemble one's firearm is a valuable and important skill taught by most (if not all) militaries around the world. Being able to rapidly strip and reassemble the weapon means that you can be back in the battle rapidly if your unit is attacked while you are servicing your firearm.
While it's easy to clean a rifle at home, when one is deployed for long periods of time it becomes necessary to clean and perform repairs on one's weapon without the luxury of a quiet home atmosphere.

Well we think not. It takes many to make the world go round.
Teach them young and you teach them responsibility. Typically the people shooting others in the States have not taken a gun safety or hunting safety course. This girl probably has.

But as you can see even an 11 yo girl does not fear the firearm. She understands it and it's capabilities and accepts responsibility for it. She learned about it and how to properly use it.

You find a young girl taught the proper use, safety, and field strip techniques of firearms to be "disturbing"? Seems to me that learning how to properly use and respect firearms is preferable to quaking in the corner with fear about them.

She has a bit of an advantage with the small fingers when reassembling the bolt. A full grown man working with those little friggin parts is a pain. Slowest part of the entire breakdown.

Ok, let's clear up a few things here.
1) Your use of the word NEED is somewhat suspicious. Need is in the eye of the beholder, or, in this case, the weapon holder.
2) In the U.S.A. we have a RIGHT to bear arms. That is, we are guaranteed the right by the Second Amendment to the Constitution to own, carry, and use firearms and other weapons.
3) For many Americans, using, collecting, and appreciating firearms is a part of the culture and a way of life. You may not understand it, but it IS part of our culture.
4) With the rise in gun violence and accidents due to poorly or untrained people recklessly wielding guns in anger, training a young person on the proper use and respect for firearms is an important thing. Particularly if one has a firearm in the home. There is NO substitute for proper training.
5) Guns are only as dangerous as the person using them. The earlier training to properly wield a firearm begins, the safer any firearms used by that person are.
6) The fact that you find this insane shows a complete lack of understanding of firearms and the culture surrounding their use. I suggest a few months of weekends spent at your local firing range under the instruction of a licensed trainer. That should clear that hysteria right up.
