I need an operating system for two machines I just got. They are older machines, so Vista is out (I own two machines with Vista already, and that's two too many, in my opinion). I'm also not really wanting to have to go out and buy an XP license again, especially since I don't know if any are still available.
What do you recommend? Something free is nice, but also something that can run windows games such as EvE, Guild Wars, SWG, etc, etc, as well as run programs such as firefox and OpenOffice?

free, comes with firefox and open office I believe. Eve supposedly runs on linux now (classic graphics only), and I believe there are programs you can use to run other things. although I am a complete linux noob.

Somehow, I don't think the GD users need to INSTALL "whine". They seem to have an abundance of it already. Tactical Logistics using the last T1 Frigate hull!

What's Ubuntu look like? Is it a classy interface, or am I going back to Windows 95? And how well does it do in performance, and security?

It feels a lot like Windows XP to me, though I think you can tweak the interface heavily to your liking. As for performance I have no idea, and about security, I hear it's one of the safer OS's around.

The interface is highly malleable. You can install and remove elements at your own desire. there are also different "flavors" of Ubuntu available.
1) Ubuntu - the standard version that most people use. Uses the "Gnome" interface (rather "mac"-y in that it uses a top taskbar for all the menus, and a bottom taskbar to show the open windows) Has an "earthy" colored interface with lots of browns, and whites and orange as a highlight.
2) Kubuntu - Second largest version of Ubuntu, uses the "KDE" Interface, which is more complex than Gnome, but more like Windows in general arrangement. It uses either a black and blue (new KDE style), or silver and blue (old KDE style) interface, and has a slightly different set of default programs than regular Ubuntu. No better or worse, just different.
3) Edubuntu - Special version of Ubuntu for educational institutions. Uses the Gnome interface and has an earthy color scheme similar to Ubuntu's.
4) Xubuntu - Third most popular version of Ubuntu, uses the "XFCE" interface, a highly simplified interface designed for much older systems. This is a special designed "light" version of Ubuntu specifically for older systems. Although it will work marvelously on newer systems, it's extreme simplicity and spartan interface can be a bit daunting for new users.
5) Ubuntu MID edition - Special verion for Mobile Internet Devices (Think tablets and those nifty eeePC's.) Uses a special interface designed around touchscreens.
There you go, you can pick and choose from the list.
Personally, I prefer Ubuntu. The Gnome interface, while different, seems to offer some better default applications than KDE for me. However, the new KDE interface is very sexy, although it may be too much for your older machines.
If you have VERY old machines (P3 and older) I would suggest sticking with Ubuntu and NO fancy effects, or even Xubuntu, for it's light footprint. If the machines are only slightly old, then regular Ubuntu should be just fine, even with all the fancies turned on. Tactical Logistics using the last T1 Frigate hull!

It's running the same core as Windows Vista, but oh boi, it's so much better than Vista in most ways.
Windows Server 2008 is more secure, run programs and games faster and better than Vista. And ofc, Windows Server 2008 is stable as mountains. And Server 2008 doesn't have all of this bloatware and shit like Vista have.

Wine basically allows Linux to emulate a windows OS environment so you can run windows based programs. It's got some problems with some programs but is overall worth having for those gotta have windows apps that haven't been ported to Linux yet. In EVE, your only friend is your ship and it's weapons. If you are looking at Linux but you want a common interface similer to windows then use Kubuntu. Kubuntu is basically Ubuntu with KDE.
Ubuntu 8.04 is very stable, works a charm, has loads of features and can be updated very easily. Theres literally thousands of add-ons and extras which can be easily accessed with no problems. By using Wine or VirtualBox you can run windows games and applications quite easily too.

You know, I must be the only person on the planet who never had any issues with Window ME.
On the other hand, all the problems I've had with 64-bit Vista are enough to make decide to buy a mac when the time comes next year... ---

You are not alone!
I got a lot of use out of my copies of ME over the years and I have to say with no noticeable increase in problems compared to 98SE. The copy I had was an OEM copy which I was very happy with.
Still, it would be silly to recommend it these days, it is obsolete afterall.

Ubuntu can display four desktops on a 3-D rotatable semi-transparent cube with hardware accelerated video playing stretched across multiple desktops. Among other equally impressive tricks.
I personally stick with XP though, as I have no interest in learning a new OS for the sake of flashy visual effects. -

XP is ok. I run it on my gaming system when i'm not using Ubunto (duel boot system). I just slapped Ubunto on the Vista laptop (duel boot) and I have to say, it runs a hell of a lot faster now. I'm still stumbling my way through Ubunto but tbh I am liking it more and more each day. You might want to step to a duel boot system as a transition. it gives you the chance to keep both OS and have the best of each while your learning. then when you feel confident, you can just dump XP and enjoy the wonderful freedom of a pretty well community supported OS that is 100% free.

Depends..
EvE (of course, and I'm sure whatever WoD game CCP comes up with) OpenOffice GIMP Firefox and all of the Company That Shall Not Be Mentioned games have run on macOS for years. Most games I'm happy to play on a console these days, they've really come a long way. I own all my music, I can just re-rip it (it's all WMA format right now though).
I'm not nearly as much of a superultrahardcore gamer as I used to be and even though windows is far more tweakable than MacOS will ever be I'm tired of dealing with all the stupid shit Vista does (on top of the normal windows issues) and I want something that just works out of the box without having to take a big performance hit for it. If it costs a bit more, well, I can afford it.
Plus MS has turned into the IBM of yore. I really can't see them being dominant in anything except enterprise in ten years. Don't know what will replace them but I figure it's as a good a time as ever to jump on a different bandwagon. ---

I have a friend who switched to Ubuntu and loves it. I just can't find the motivation to switch, as XP does everything I want to do just fine. I tried putting in on a VM, but I have yet to find a use for it. -
