Mississippi Mud Pie
Use a chocolate or vanilla cookie crust, or a graham cracker crust, to make this Mississippi mud pie. Ingredients:
1/4 lb. butter, 1 stick 2 (1 oz. each) squares unsweetened chocolate 3 eggs 3 tablespoons white corn syrup 1 1/3 cups sugar 1 tsp. vanilla 9 inch graham cracker, chocolate or vanilla wafer pie shell
Preparation: In a saucepan, heat butter and chocolate, stirring often, until melted and well blended. Beat eggs; stir in the corn syrup, sugar and vanilla. Add the chocolate mixture to egg and sugar mixture, stirring well. Preheat oven to 350-¦. Pour filling into prepared pie shell. Bake 35 to 40 minutes, or until top is slightly crunchy and filling is set. Serve warm with a scoop of vanilla ice cream or dollop of whipped cream. |

Heres my preferred. CHOCOLATE PEANUT BUTTER PIE Graham cracker pie crust 2 oz. baking chocolate 1 c. sugar 4 tbsp. butter 1 1/2 c. chunky peanut butter 1 c. boiling water 2 tbsp. cornstarch 1 tsp. vanilla Powder sugar Melt chocolate in water. Mix cornstarch and sugar and gradually add to chocolate mixture. Bring to boil; it will thicken. Add butter and vanilla. Pour at least half into bottom of pie crust. Chill. Gradually add enough powdered sugar to peanut butter until peanut butter is no longer sticky. Pat on top of chocolate mix. Re-melt some of chocolate mixture in microwave; add dabs on top of pie. Chocolate mixture also makes a great ice cream topper.
This way if you have someone not in the mood for pie like a small child, you can still use the mix as part of their ice cream. Delish! |

Apple Pie Recipe
Ingredients
1 recipe pastry for a 9 inch double crust pie 1/2 cup unsalted butter 3 tablespoons all-purpose flour 1/4 cup water 1/2 cup white sugar 1/2 cup packed brown sugar 8 Granny Smith apples - peeled, cored and sliced
Directions
Preheat oven to 425 degrees F (220 degrees C). Melt the butter in a saucepan. Stir in flour to form a paste. Add water, white sugar and brown sugar, and bring to a boil. Reduce temperature and let simmer. Place the bottom crust in your pan. Fill with apples, mounded slightly. Cover with a lattice work crust. Gently pour the sugar and butter liquid over the crust. Pour slowly so that it does not run off. Bake 15 minutes in the preheated oven. Reduce the temperature to 350 degrees F (175 degrees C). Continue baking for 35 to 45 minutes, until apples are soft.
