I've done a couple attacks on convoys now and though I've answered a few of my own questions, its also led to more questions. I have killed from outside sentry gun range no problems. Killed incoming convoys within 120k of sentry guns and still no problems. Also, I've not been able to find any faction changes.
Did I happen upon a proper method, killing only the outbound convoys ? Are there any faction changes (or only a change if I provoke the sentry guns?) If I provoke the sentry guns, can I run away and come back to that station later ?
Or any other tips ?

I have heard that attacking convoys is a complete waste of time now and way to dangerous with this faction thing they put in place. i consider them eye candy only now. Its completely *** to chase them out to 150km to gank them.... most i have seen warp out at 90 km JOBS - Got Moin?

The best place to attack them is at the station they're going to dock at (their destination), as long as this station doesn't belong to the same corp as the one they exited from. If their destination is not in the same corp as the point of origin the sentries at the destination will not fire on you for attacking the convoy. You will still take a stanging hit with both the corp the convoy belongs to and the navy whos space you've destroyed the convoy in.
Convoy loot is 95% useless and not worth the standing hits.

You can safely attack any convoy that is not in range of any sentry guns that belong to a station that belongs to the corp that the convoy came from.
So for instance: If a convoy is going from "Imperial Shipment" to a station owned by any corp except "Imperial Shipment" you are free to blow them up once they are at the destination. If though that convoy is coming from "Imperial Shipment" to another station owned by "Imperial Shipment", you will be fired upon by sentry guns if you are in range.
Currently there seems to be no faction standing changes for killing convoys, only corporation. This though is nothing to laugh at, as every complete convoy you kill, and perhaps even if you only partially destroy the convoy, gets you about a -0.27 corporation standing penalty. I think once it hits -5.00 that corp's sentry guns will open up on you if you are dumb enough to warp near one of their stations.
Overall though, from my limited experience, destroying convoys is not worth the time when compared to the amount of isk you can earn mining or doing missions. Even in a system with 19 stations convoys are not common enough to keep a two ship team busy.
One more thing, if you do destroy a convoy you would be wise to stay away from their corp's stations for a while. Perhaps 15 minutes, but you can't be too carefull. I learned yesterday, due to an error on my part, that those sentry guns hit VERY hard. One of them took my frigate out in 2 shots.

Wrong. There is a way to determine where they came from, but I've already spilled enough beans here. You'll just have to figure that one out for yourself.
