My corp has details of our enemy planning on transporting large amounts of goods back from 0.0 to empire. They are going to have to make two jumps as they don't have jump cal 5 yet.
To reduce the risk they are going to setup a POS (no guns, or other arrays just a shield) and jump to it, then jump to their death star POS in low-sec on the border of high sec.
We are trying to decide the best way to attack this caravan. My best guess is that you won't be able to open the jump field in the shield of the POS, so they will have to be outside the shield to do this? giving us a brief window to strike at their mid jump point? Once the cyno alt is in position how long does it take to open the cyno jump portal? We don't have any experience with capital ships and so any tips or info on how this works would be helpful.

they will have to open the cyno outside the shield of the POS, however that can be 500m outside the shield. Once in position its just a click of a button to open the cyno, and most likely they will only open it once whatever is jumping is 100% ready.
Therefor your window of opportunity here is from when the cyno goes up, to when whatever jumps though has crawled into the pos shields. That can be as little as 1-2min.
Really you probably want to have a ship (cloaked) at the pos when then cyno goes up, then its up to you really. Webs to stop it getting inside the shield, try bump it away or just kill it very fast.
Also, kill that cyno as soon as you see your target in local.. dont want anything else coming though.

Find some interdictors and some ships with large mobile warp disruption bubbles.
Wait til they've jumped in; it'll be several minutes until they can jump out.
At that point, get the dictors to the pos (you may have to wait 1 jump out) and repeatedly put bubbles around them and the pos shield.
As you're doing this, anchor large bubbles around the pos, which WILL penetrate the shield and not allow them to jump out.
cyno in dread fleet / snipe BS fleet / RR BS fleet / HACs (depending on what they're bringing; carriers or jump freighters etc)
... Enjoy.
If you really feel evil, have the ships there already, logged off, awaiting "the signal". The signal invariably is "THEYVE JUMPED, THEYVE JUMPED!!!"
EDIT: this may not work if they have put stont in the tower; you'll have to wait anywhere from 1 hour to 2 days if they simply log off in the pos shield. --
