Or some method in game to find them? I'm a noob at using the star map.

What constitutes a trade hub is more or less arbitrary. You can usually find them by opening the map. Anyway,
Major trade hubs:
-Rens -Oursulaert -Amarr -Jita
Minor trade hubs:
-Hek (? I think) -Dodixie -Motsu
Just what I can think of at the moment.

Trade hubs are useful if you want to get the item your looking for quickly, however they are usually overpriced(especially amarr), filled with scammers and Jita-lag will drive you totally insane.

Open the starmap, go to the "star - color by", under "statistics", select total players online. The bright spots in empire are usually trade hubs, the brighter the larger the hub. Bright spots in 0.0 might indicate an ongoing battle.

Rens is nice, especially if you are (for some stupid reason like me) climbing the Minmatar Brutor (angry former slaves) Tribe mission chain. :)
What does getting way up there buy me, anyhoo? Is there a point to climbing all the way up the smaller NPC corp chains?

It depends, do you mean trade hubs? There are also a lot of mission hubs that have fair amounts of trade going on within them. In fact I believe Jita started this way - it used to have a lot of mission agents. Dodixie is replacing Oursulaert as the Gallente trade hub because Dodixie is a more popular mission hub.
Some other mission hubs I know about are Penirgman, Ebtesham, and Youl (near Amarr) and Lustrevik, Frarn, and Gulfonodi (in Minmatar space).
There are also a number of low-sec hubs where you can earn a good profit as a trader or pirate. Irmalin is one of these.

I have a noob question to add. I have never understood why people use the trade hubs. Seems like its hard to sell stuff there because there is so much other stuff on the market. On the other hand I never buy anything in the hubs because its all overpriced. So, and Im really not being condesending, why do people use the trade hubs? All I can guess is you pay more to have all the materials in a close area for manufacturing?

Prices in trade hubs are generally lower than elsewhere (excluding minerals) and the total trade volume is WAY higher than other places. The lower prices mean lower profits per item for manufacturers/traders, but the higher volume makes up for that. Buyers like the hubs because of the low prices and because pretty much anything is available (one-stop shopping).

I noticed, on occasion, cheaper T2 hulls (Minmatar specifically) in Heimatar and Metropolis than in Jita. This is going back over the last year - 18 months, and probably due to those regions' proximity to research agents that provide datacores for T2 invention. These were probably lower scale producers who wanted to sell off their smaller number of hulls quickly.

No, I'd bet that it's because there's a higher volume of trade there. Lots of minmatar pilots hang around minmatar space. I believe this is true of every race's space... I know for example that Amarr faction ammo is cheapest in Amarr and most expensive in Dodixie, of the major hubs.
