If we manage to find a new incentive, then maybe even we can lure back our old friend who originally got us into the game.
So ... soon .... somewhere ... some pirates are going to get into a fight...and it will decide the fate of at least two Eve accounts.
Any thoughts, comments or suggestions are welcome....

Now, do you want to get serious about PvP, or just destroy all your shinies? If the second's the case, just contract 'em to me; I'll put 'em to better use :)
Now, to get SERIOUS...
What you want to do is learn PvP. Since you WILL lose ships, and since PvP is such a different beast than PvE is in EvE, the BEST thing you can do is temporarily join a corp that teaches the basics of PvP. They're out there, and usually the most you risk is a frigate, easily replaceable. Two corps that do this are Agony Unleased and EvE University (though EvE University's been wardecced and isn't runbning classes at the moment).
Second thing you can do is get into a frigate leave your current corp, and join a Militia for a bit. Engage in FW for a bit, and you'll also learnt he ropes.
Also, when you get ganked (and you will), try starting a conversation \with the guy that killed you. Be upfront and don't smack - you'd be suprised how many gankers can and will offer tips on how to deal with what they do. A lot of them want fights where there's at least SOME challenge...
Anyway, I'd do the above rather than a suicide run...and what you're p[roposing to do is nothuing more than that - a suicide run.

A Raven that can tank every level 4 mission under the sun is going to die horribly in the first gate camp you come across.
Pick small ships - rifters are quite popular for beginning PvP - and skill up in the use of turret weapons (small projectile weapons specifically for the Rifter), warp scramblers, webifiers and target painters.
Have you and your wife practice killing each other before you head out looking for PvP. Make sure you insure your ships, and don't spend more on any fitting than it costs to replace the whole ship. Until you can reliably kill each other while flying frigates, don't try PvP against people who have more experience than you :)
Rancer is always a good place to find pirates, they'll be in battleships using blasters, right on the gate. The guy you want to kill first is the one warp scrambling you. Being able to run away is more important than winning the first time.

I know you're trying to be helpful - thankyou - but I am such a noob that I don't even really know what you mean. We've never meaningfully set foot outside of safe space. We've played Eve like a co-operative single-player game. We don't know anything of the real Eve.
Really hope that the constructive input so far put out here for you will help with this 'Operation L2PvP' of yours. I will throw in my .02 and say that I know a modest space holding null sec corporation that would be interested in reviewing your application (i.e. mine). Its great fun to convert carebears into killers, especially when its a couple that have 'played Eve like a co-operative ... game'. Even if you are a self described anti-social lot, you have something unique to offer the right corporation. Give 'em hell no matter how you choose to have your fun...

Many of the tips posted here are VERY good. With what you are thinking of doing, would amount to nothing more than getting yourselves killed very fast, and in an anti-fun +1 way. Like many others have suggested, I'll recommend that you find a corporation/alliance that would train you and help you get your feet in PvP. It's a very daunting task when you first start, but it's not a hard transition from walking to jogging/running.
I'm going to join the militia crowd, being Caldari militia myself. The militias are a mixed bunch. 1/2 of the Cald Militia fly primarily in fleets. Unfortunately, that's our bad side, and probably not where you want to go. Where you would want to go is into a smaller "plexing" corporation. "Plexing" (Complex-ing) is about the closest thing you've got to missions. It allows you to make money, and more than likely someone's going to investigate what you're doing, giving you a nice fight.
In the end, it results in a fight that you'd want.
But, first step is to learn the ropes. Know what you're doing, and what you want to do, before jumping into the ocean that is PvP.

I'm going to echo everyone else here and say "Please for the love of god don't throw your mission ravens around in low sec trying out this 'pvp' that people keep talking about". That is how people rage quit the game or never enter low sec again. Lots of game mechanics to learn and the best way to learn is by making all the classic mistakes that will get you killed.
If you can fly a raven, you can probably fly a drake with decent skills or can get decent skills very quickly.
I also suggest trying out Factional Warfare. Factional warfare is not as cutthroat as low sec and there are plenty of people flying around in tech one throw-away ships that you can practice on.

A good idea is to join up with factional warfare and make your way to joining a faction warfare gang. When you have had your pvp fill, just leave factional warfare and build up your stockpile again and then repeat the process.
I would say its a good way, since it gives you time to experience pvp without being horribly ganked. --

I was in the same position as you guys i just decided to give the game 1 last big push. I joined Faction Warfare, found friends, enemies, jokers, idiots, pirates, lots of killing, a new corp... and at the end of each day i can get back to our factions high-sec system and be safe.

I seem to have made a mistake with the type of ship we have. Thanks, last nights beers! We actually have Drakes. Not Ravens. I slapped my head when I realised.
We actually used to have Ravens, briefly, but we lost them by being stupid. Our skills are more suited to Battlecrusiers anyway.

Your odds of dying vs. winning are about 100:1 when you try this (if not worse).
Better go out again in those same tiny destroyers from the first time, only now not once, but try a dozen times. Maybe one of those times you manage to kill a pirate or other hostile. Go on from there.
Expensive ships and expensive fits don't win battles. Pirates will only engage you if they have the upper hand. Odds are that you are going to be jammed by some Falcon and not even fire a single shot before being destroyed.
This sounds like a married couple living in the suburbs, buying them some expensive weapons and then moving into a warzone without training. ____

There are plenty of good replies in this thread.
OP should get some PvP practice with cheap ships before doing anything else. Start flying T1 frigs (Merlin or Kestrel are good choices since you already fly Caldari), and prepare to die horribly. You will die again and again at first, as your opponents will have much more experience than you.
After a while you will have learned how to recognize traps and baits, and you will become good at avoiding them. Once you have learnt how to GTFO from the situations that would otherwise get you killed, you can start attacking people that you can actually defeat in combat. Repeat for a few weeks, and there will be threads filled with carebear tears and whines about you ruining somebody else's day. :)
Also, as somebody else mentioned, there are corps and alliances that have PvP classes that might be worth checking out.
Best of luck to you and the missus. PvP is what makes this game all worth it.

My suggestion for you two would be to join a 0.0 corp that does more then just pvp. Itll allow you to explore alot more of eves game content then you have available in empire and you might jsut find what youre looking for.
Also while some corps have clowns like these here, there are plenty of mature corps that look after their members.
Most of all, be pro active and try to not think so much about making isk but having fun - battlecruisers cut it just as fine ;) -

Without reading those replies, it's good to see you changed your mind.
Used to dice around with what you planned on doing myself in yesteryear, by myself, with the alt, or with a few trusted others.
Things change though, the fun i/we had kinda died out as the playerbase changed, for the fun of it died out and it became all station docked/logged/playing on alts elsewhere and inspace numbers over your own, rather than chancing it taking loses and having fun doing it on the unpredictable.
Per your original plan you'd have got that, zero fun, it'll have been death for you or sitting watching a blank screen.
Being the aggressive party in eve only works if you go after somebody when their pants are around their ankles so to speak, why low sec pvp doesn't work (on a fun basis) unless you have two willing parties... aka the days of old
Go with the group, i suspect you've been told that allready
